How to Freeze Tomatoes

    INGREDIENTS
    - 1 lb tomatoes (for 1 pint)
    INSTRUCTIONS
    - Bring 8 quarts of water to a boil. Remove the core and any blemishes of each tomato. Dip the tomatoes in the boiling water for 30 seconds. Remove from the water and cool until they can be handled, 2-3 minutes. Remove the skins, which should slip off easily.
    - Juice or dice tomatoes and pack them into airtight freezer containers, leaving one-inch headspace to allow for freezing expansion. Label, date, and store in the freezer for up to 8 months.
    - To use, thaw the tomatoes in the refrigerator one day before use. Use as any canned tomato.
    NOTES
    The tomatoes listed yields 1 pint. For additional pints, simply increase the number of tomatoes, one for one.

    This is validating! I usually freeze my tomatoes while, but this year, I peeled and de-seeded like this and the tomatoes are taking up far less space in the freezer. I can quickly prepare something since the tomatoes are already processed when I cook.

    First off… Gorgeous kitchen! I am obsessed with inset doors and drawers (I build so I love the consistent spacing also) and I love the soft creamy neutral base, shiplap and then your well thought out shelves beside your beautiful stove range and the little nook hidden inside for extra spices and salts, pepper, etc… great style and design! Anyways thank you for demonstrating, first time I’ve seriously tried growing and unfortunately where I live in ks I’ve had a heck of a time growing 🍅 especially the European type that are beautiful but I do have romas thankfully and needed an idea of how to blanch and how to store in the freezer. Glass jars scare me, I’ve preserved only zucchini and squash and herbs frozen but that’s it so thank you. Hopefully you share some recipes for your tomatoes

    I got a great harvest from my tomatoes this year, so I froze them first, then canned them when I had enough to do a large quantity. I would have left them in the freezer but I had limited space. Thank you for the tips, especially about pouring juice on top to prevent freezer burn!!

    Thank you! WHY wasn't I doing this?! I was freezing them with skins on and removing the skins during the thaw process which was a messy watery nightmare. I don't know why I never considered blanching first, removing skins, THEN freezing. I think it's best to blanche all veggies before freezing anyway. It's been awhile since I've had a nice tomato crop. Soil disease or something..ruins everything.

    Could you please tell me the name of the pinkish tomatoes. We kept seeds but have no idea what they are. They are non -acidic I believe. My friend had these snd we would love to know what kind they are

    I just pop them whole into a Ziploc bag and freeze. Then I can take a few out for a dish, let thaw in a bowl and the skins slide right off. I have a small garden so as I harvest through the season, any that I don't eat in a few days goes into the Ziploc. By the end of the season I have a few gallon sized bags frozen for the winter/spring. In fact I still have a bag from the 2020 season. No freezer burn either. Just thought this might help anyone who isn't having to deal with large batches. If I had a big garden and had lots each harvest canning and stuff would make better sense, but having a few extra fruits each week, this is the easiest and laziest way for me

    So many of mine are still green. Will they turn red (zone 5a) or is it too late in season? If not, I'm going to try to preserve them, anyway, but thought you would know.

      Stop watering them and they’ll ripen faster! I’m 5b and, unless it rains, no more water.

    Wow - you lost me when you added the liquid to the container. Tomatoes turn to mush when defrosting & exude a ton of juice anyway. Why not lay on a sheet to flash freeze, then pkg them dry?

    You do you but too much work to freeze. Take the skin off and freeze in my opinion. I freeze and then take them out and put in a food save vacuum bags

    Lol just chop them up and freeze them.
    I still watch your video because of techniques, but yeah its just easiest to chop them up and freeze.
