    Who doesn’t love cheesecakes? For those who are not a fan of water bath mini cheesecakes are the perfect dessert bites for you! These are easy to make handheld bites that are rich with a subtle tang from cream cheese, nestled on a buttery graham cracker crust.
    You'll need:
    • 1 cup/9 full sheets (100g) crushed graham crackers
    • ¼ cup (56g) unsalted butter (melted & slightly cooled)
    • 16 oz. cream cheese (room temperature)
    • 1 cup (311ml) sweetened condensed milk
    • 2 medium eggs (room temperature)
    Makes 12 mini cheesecakes
    :: HELPFUL HINTS:
    Make sure cream cheese is at room temperature before baking to ensure a smoother batter. One can always soak the package of cream cheese in warm water for 5-15 minutes to bring it to room temperature.
    Avoid cracks and center shrinkage: Use all ingredients at room temperature. Place pan at the middle rack of the oven. Cool completely at room temperature before chilling.
    Best time to serve: Let it cool completely before chilling. It is best to chill them for at least 2 hours or overnight before serving. Decorate with your favorite toppings.
