Ishta is really just clotted cream. If you can get your hands on some. The authentic version is just the fat they used to skim off the top of whole raw milk.
@@elleash3888 Thanks! I've never had clotted cream before, but I watched a UA-cam video on how to make it. It had occurred to me that clotted cream was what I was looking for. After watching the video, I was guessing that clotted cream would work, but it was not the same as what I saw being made to fill the cream baclava. Ishta is what I was looking for that none of my Mediterranean cook books ever talked about.
We call it Laz Böreği in Turkey..Cuisine of Southeastern of the Türkiye is same with middleeast and Arabic food but "this dessert as we call it Laz Böreği is in North part of Türkiye .Caucasian Cuisine

There was also a time when there were ottomans or nomadic Turkic tribes who also had a food culture and created their own thing. And if you talk about the name of some of the dishes having similar names to our neighboring countries then think about why that is. I had this dessert at a fantastic Middle Eastern restaurant in London a few yrs ago. I couldn't remember what it was called, but it was better than Baklava & I ❤ Baklava.
