I made this recipe twice now and thank you! It’s a cute twist on Knefeh, cheesecake and cupcakes altogether. However, to anyone reading this comment I’d advise to really cut down the sugar. It’s not only about my own personal preference, it’s also the people I made it for. So these are my tips: - Skip the sugar in Ashta. Make it without sugar - the simple syrup go one to one ratio as in 1 and 1/2 cups of sugar to 1 and 1/2 cups of water - cut down 150g of sugar to only 100g (this tip I haven’t tried yet but I will next time because though I made Ashta without sugar and I made the simple syrup way less sweet, the outcome was still too sweet)
Interesting authentic ashta is clotted cream but the canned stuff isn't authentic but its is as close as it gets. In England we have clotted cream and mascarpone cheese which is the closest we can find here. There is also kaymak, which is turkish clotted cream. All the arab stores sell the canned type.

Ashta in Arabic is thick cream. The authentic Ashta comes from slowly heated full fat milk (the cream rises on the top and it’s scraped slowly to form rolls). The one she made is a lighter man-made substitute usually used in Arabic pastry shops. It’s used in many desserts like Kunafah and katayif (thin pancake-like dough stuffed with Ashta or walnut stuffing and closed to form half circles)

@@Granchen08 it’s called shishbarak. Here’s a link to a good recipe. Use Syrian mixed spices with the meat, and fry garlic and chopped cilantro and toss on top at the end. Just remember you don’t add vanilla til then end of cooking, otherwise you can cook off the flavor. Add at the very end 👍🏽 Otherwise, yum yum!

What's a good substitute for vanilla extract? I heard it has alcohol in it, that's how it's extracted.
You can use imitation vanilla, it contains no alcohol.
