- A really fun and tasty way to use more of these little golden flowers. Dandelion cookies! This was my first try making these, but they turned out great.
Dandelion Cookies: (I made a double batch)
1/2 cup oil
1/2 cup honey
2 eggs
1 t. vanilla
1 t. baking soda
pinch of salt
1 cup flour
1 cup oatmeal
1/2 cup dandelion flowers
Bake at 375 for 10-12 minutes.

I live off grid (as in no physical connection to public utilities) in a tiny house on wheels in the mountains of western Wyoming. For a bit of my background, as a child, I was fortunate enough to be able to spend much of my free time exploring and playing in the woods. Little has changed now that I'm older I suppose. I moved to a place with a bigger woods and still enjoy spending my time outside gardening, hiking, exploring, and photographing the natural world around me. As the eldest of seven children who grew up in a homeschooling family, I had the opportunity, not always appreciated at the time, to learn to do quite a bit of work. I've enjoyed a wide range of jobs, everything from greenhouses and flower arranging to wilderness therapy with teens, to milking cows. Mostly, I enjoy doing the kinds of things that I think provide a real service or value to others. Some of my other hobbies include backpacking, hosting people, cooking, preserving food, anything to do with nutrition, reading, journalling, and sitting around a fire and talking to my close friends.

I've made several interesting recipes with dandelions, but my fave is batter-fried dandelion blossoms. They taste like mushrooms but with a nicer texture (no slime factor). My second fave is dandelion mead.

When I am out in the woods for a week I pick up dandelions and roast the root. I then crush the roots to a powder, put them in a pot and slowly bring them to boil. Then filter while pouring in a cup. Great replacement for. All natural, no additives

Up until 3 years ago I had no idea the dandelion plant was edible. Those cookies look good! You look wonderful with your hair up, really glowing in this video!

I agree about when we lose our wonder at the wonderful dandelion. Such a versatile little plant. I hesitate to use any in town here due to our company use of pesticides. But I surely would love to make ANYTHING from them. So so nutritious. Thank you sweet fun Ariel. You make my day much more interesting. I think I watched 4 hours today. I'm 73 now. Many things no longer interest me. But your hippie type lifestyle, lol, makes me smile. Please don't be offended by my remark. I mean nothing bad. You are a gloriously interesting woman.
I have made dandelion wine and it tasted just like a good chardonnay. I have also tried making the root into a kind of coffee. You dig up some mature roots, scrub and dry them and roast them in the oven. Then they are ground up and used like coffee grounds, they taste different but not unpleasant and slightly sweet.
I'd like to learn more about wine making someday. I've heard the coffee substitute thing, but not liking coffee personally, I have never tried that.
Fy Nyth the trick with gathering the flowers for wine is you don't want the green bit just the yellow. And it takes so many to make a batch of wine that I gather the seeds and force them in a flat - they will still produce a flower even though they are overcrowded and then you can toss them somewhere where they have a chance to grow. :-)
Hello Ariel; I really appreciate your good taste in video. I agree about dandelion. They are not weeds, and it's a shame that people waste money to poison their edible plants.
Also I noticed one morning on a short walk as I was looking down at the grass and when my eyes saw the yellow dandelion it cheered me up a little. Amazing.
And now you're making dandelion cookies . They look wonderful, and delicious.

Hi Ariel! Dandelion is really good to detoxify our livers and blood as well as all the benefits you mentioned. I've never heard of using them in cookies, thanks for broadening my horizons! Your hair looks lovely up in that manner :-)

Hi, I just want to thank you for your interesting and educational videos. The relaxed manner in which you cook etc. reminds me of my childhood and mostly my Grandmothers way of doing things. I don’t think I ever saw her with measuring cups or spoons, she would send me out to.the apple tree to fetch the apples or up behind the church cemetery with a milk bottle to pick blueberries and soon after I came back the oven was heated and a the aroma of a fresh fruit pie was in the air. Pies were her specialty. Lard was used for the crust always but I don’t know the amounts of the ingredients. Pinches of this and that ans a coffee
Cup was used to pick up the flower mostly or she could pour it in the bowl from the sack. I used to get to roll out the crust and peel apples. That was way back in the 50s’. you look so pretty Ariel and those cookies look delicious. I wanted to mention there is an imposter dandelion that is poisonous. the only difference between the real deal and the Imposter is the Imposter has fuzzy leaves where as the dandelion does not

I made these and my dandelions were as fuzzy as kris novaselics bass on breed , will I be OK? I ate like 12 of them the only symptom I got was diarrhea for 5 straight days , verbal
I read about the poisonous imposter too. Now I do not want to attempt a dandelion ANYTHING. So it's the leaves that are fuzzy. I forgot what part I had to look for to know the difference. Thanks for the heads up, BEAUTIFUL VICTORY.

Thanks for the recipe, will try , but may add some walnuts or pecans and raisins.. Yum...I usually make tea from the dried flowers and eat the leaves in dishes I make or even soups.. I read that it was great to help lower blood pressure.. I use in moderation.. I also use purslane ( Yes that pesky weed in my soups.. and stir frys... I have to as they take over my planter beds... I'm sure any of those would be good! Very nice. I like purslane, but it doesn't seem to grow in this area. It did in PA where I grew up though.

@@FyNyth it's nice that you wear skits and dresses - unusual these days :-) Is you shower always full off clothes, do you only shower at the gym and is that close to where you live or work? Is you family nearby and do any of your siblings live similarly? What, if anything - besides lights and your water pump uses your solar electric? I love that you cook with your hands, don't measure and clean-up as you go... me too.
I was about to comment that you should do the taste test too and it was here! Most your recipe video didn't have that and it's essential!

I've never out grown my love for dandelions and always thought a lawn poke-a-dotted with them was beautiful. Never made a salad out of them cause I was never sure if it was chemical free and thought it ridiculous to buy them. If I can find/buy the flower I'd try the cookie recipe or the dandelion oil.

They look amazing! So glad you showed how to prepare them...have never seen anyone show that before..I guess they assumed everyone knew already! Now if you get time can you show more ways to prepare them...maybe the tea? What do you clean your oven with? TFS this was really fun and informative!!
I plan to do more free foraged food videos as I have time. I find almost all oven cleaning is easy if you heat it up a bit with a pan of water in there. Enough to create steam and soften any buildup. Then as soon as it's cool to the touch, I just use my little stainless steel scrubby and warm water with dish soap to remove the softened dirt.
Dip dandelion flowers in egg and coat with coconut flour fry in coconut oil, lightly brown drain on paper towel. Sprinkle with organic white powdered sugar or serve with homemade sryup

My neighbors in PA. used to make dandelion tea. I thought they were whacko. Had i known about the liver qualities, i should have learned how to make it. Thanks for the lesson, you look nice.

Very interesting. Who would have thought of cookies? My dad made wine from them once which I unfortunately didn't get to taste but was told it was good. Makes sense about being edible though as so many things are. Thanks for sharing.
Dandelion is VERY healthy thing to consume!!! :-) We have made a syrup from them to add to our Kombucha.

There was a book called "Eat Your Weeds" (I think)....and there is often great organic, pesticide-free, non-GMO , nutrition that is free too, if we just have the sense to harvest our yard once in a while. : )
I was wondering about adding chocolate chips and very glad to hear you suggest them! Also, how about tossing in some walnuts?! Good dose of vitamin D on your skin, while picking those wildflowers!

I love the recipe and also did a double batch like you did. But I did twist the recipe a bit. I did use the coconut oil, but I used a cup of my cannabis infused coconut oil for some added medicinal purposes and turned the heat down to 350 degrees so s not to cook off the terpines.

I do with the ones that grow here. Mostly huckleberries, thimbleberries, currents, etc.

Welcome! Thanks for joining the Fy Nyth Flock. My shower does work, I just don't use it. :) I did. I tend to curl up on the couch or even in bed to read or work on my laptop so I didn't use the chair much and needed a place for the wood stove. The chair is in a friend's living room now and used every day.
Ariel, I wonder what flavor the flowers added to the cookies? It would be interesting to have a test of same cookie with out the dandelion flower next to one with the flower. My neighbor was spraying all the dandelions in their lawn. I thought that I had some growing on my land but they turned out to be something completely different. A two foot plant with small yellow flower. Sort of like a mustard but did not match any of the pictures of mustard plants I found on line.
I found that a very little bit of salt will kill the bitter flavor. If you put a couple of grains of salt in a bitter bottle of beer the bitter flavor is gone.
I don't know what to call it. A light flowery flavor? It's not a strong or very distinct taste to me, but I like it.

I lived in Calgary Alberta back in 81 and found out that if you dont poison the yard to kill the dandelions you will get an almost 300 dollar fine. There was a few families in one house next door and they sent their ten kids out to dig up some dandelions by the root with a screwdriver and then sadly I had to poison us according to the messed up law.
That's terrible! I'd move for sure if at all possible. It's so sad how ignorant we've become about good nutrition and health.
AHH, mmmmmmmm, they look great, Ariel, and I bet that they taste even better! Did you ever try Dandelion wine or the coffee from the dried roots?.....this so called weed has so many vitamins and minerals that people should respect the Dandelion a lot more than it is given.
I've had tea, and cooked greens in various forms. I'd be happy to try the wine, not a coffee fan though. I don't know how much it really tastes like coffee....
Being Canadian, we love our coffee, look at all the Tim Horton's, six in my small city, of 45,000 people......I read that the Dandelion roots, dried are a coffee 'substitute' like Chicory is too.
Yeah, most Americans do as well, I'm just weird. Don't like the taste or smell. I've heard that, I just always wondered if I might actually like some of the things people call coffee substitutes, or if they would all be too similar for me. :)
Don't get me wrong, I love tea too, mostly Orange Pekoe, boiled and boiled some more, with lemon and honey.....it gives me that 'lift' that I need some times, lol.

I wonder if a person could dip the flower heads in batter and fry like mushrooms? I have done that with ditch lilies (also known as tiger lilies) and they tasted like mushrooms. Thanks for this recipe, I will have to give it a try. You look beautiful.
I have only fried them without batter personally, but I've seen others do this so I'm sure you can!
search dandelion tempura. we do it in Japan. I have never tried it before but I would like to do if my husband take care of the oil after frying.
I am wondering, if we need sugary thing in them for consistency or we could use stevia extract or maybe even no sweetener at all.
I think you could do either way.
You can also use bananas in baking instead of eggs!

Dandelion coffee has a hint of caramel, is caffein free I don't know why it is called coffee really! Because of this it makes quite a nice bedtime drink.

Jacqueline Paddock it's called coffee because it was used along with chicory as a substitute or extender for coffee when the real stuff was scarce.

Well, while I do enjoy an occasional drink, I can't say I'd encourage too much alcohol consumption in general due to it's toxicity to the human body. But if you are going to drink, I do recommend eating lots of dandelions! :)

Ha! This is my "I just washed my hair and have things to do and if it dries down, it get's crazy frizzy fix." Turn your head upside down when your hair is sopping wet. Grab all of it and twist into a wad. Use at least three little clips to hold it in place. :)

Sounds interesting. We cannot consume our dandelions. (due to our dogs & Barn cats. We have wild coyotes that come on our property)

Does anyone know if a yard that was ever sprayed with herbicide is out of the question for good?? Or does it “wear off” if it is not being sprayed actively/recently?
I ask as I’m have recently bought a new place and have no way of knowing what was done to the yard in the past🤷🏼♀️
in time , I was told that if field is classified "certified organic", it has to be pesticide-free for 4 years. Now that's Minnesota, could be different in your neck of the woods I'm and not 100% sure that's correct.
in time if the dandelions will grow then they are ok. The chemicals have a very short life - often less than a year. The usual waiting period for land to be able to be certified as organic is 5 years but after 1 year it's safe.
Yeah you could consult a pro, but since they tend to grow from new seeds every year, I'd be ok with eating dandelions a year later. The longer without poison, the better though of course.

What did you do after you soaked them in salt water? It seems like the video just stops and you start filming on a different day with a different batch of flowers. Do you air dry them or do not wash them because you are picking off the leaves? What about the ones you used in the oil? Did you wash those as well? How thoroughly do they have to dry before you use them for different recipes? Sorry about all the questions, I'm just curious.
Yeah they just air dry. To go in oil, you do want them very dry so you're not adding water into the oil so I just let them sit on the counter for a day or two for that.
Thanks for the cookie recipe! Does the yellow color stay? It is hard to see in the video. I have done blanched dandelion buds with miso vinegrette ( rice vinegar, sugar, miso) before. I did not take the green part off, so it was still a little bitter but the sweet vinaigrette balanced it. I have to try it again tomorrow.
That sounds really tasty too! Yeah I like and eat the more bitter parts most of the time, just didn't want that flavor for a cookie. :) Yes, the cookies came out a pretty golden yellow and you could kind of still see the little yellow petals as you bit into a cookie.
What ratio do you mix vodka and vanilla beans?
I've seen recipes calling for differing amounts. I did something like 15 vanilla beans in the full bottle of vodka.

Quick question for you. How do you receive your mail?

I have a couple of comments and a couple of questions. First of all thank you very much for sharing this and for including comments about substitutions. I try to be gluten free and I'm also allergic to honey. So I really appreciate your notes about what else we can use besides your choices. I also can't have coconut oil so it would be good to try this recipe with a different kind of oil and sweetener. I do want to mention that as a hearing impaired person I often have a lot of trouble understanding what you are saying when you are cooking because of the noise of the packaging and the sound of your implements hitting the bowls and cups. That must be a consequence of the proximity of your camera or mic to where you are working. I also wanted to ask the make and model of your refrigerator. And what its height and width is. I have the next size smaller in my tiny house and I think that your refrigerator would likely fit in the space that I have and I really need a little more room than I have in my refrigerator. Thank you very much for this recipe. I don't have a lot of dandelions here but I'm going to talk to people I know who have yards and see if I can convince them to let me have their dandelion flowers. Keep up your videos, as a tiny house dweller who makes videos that are not widely circulated and only viewed by my friends, I am that jealous of your wide circulation! Seriously, your videos are awesome. I'm sorry for you hearing difficulty. I could buy a much more expensive mic, but can't place it very far away obviously in such a small space. Have you ever used the closed caption (cc) feature? You should see it right along the bottom of any youtube video. If you click on the "cc" it pops up the words along the bottom of the screen. It's auto generated, so just like when you do that with the news on TV, it's not perfect, but you might find it helpful.

Dawn Baker gather the seeds and grow them in a protected area. If you don't trust the first generation, let them go to seed and then plant them discarding the parent stock. Then you'll have an unlimited supply. :-)
Low heat will bring your honey back to liquid.
