There is no yeast in wheat flour! (Wheat flour is not used in this recipe!) There is also no yeast in cake flour. The air in the egg whites plus the steam produced will cause it to rise slightly and give it texture!.

It will not work well with egg white-based cakes! All-purpose flour is too hard for this type of application. You need to use the cake flour!
