Best demonstration on icing consistency and the visual clues to improve it. I am new and I learned a lot. We have all had those days when the icing was too thick/thin.
A lot of this was review for me, but I enjoyed how you illustrated how to get the perfect consistency! It’s truly an art! I love how you explain things and provide examples!
Thank you. That means a lot. I know when people are starting out the information can be very overwhelming specially when you don't know the terminology. I was trying to keep it accessible to everyone.
I agree with other comments. I looked at several videos before I found this one and this one was explained soooooo much better. I want to keep it simple at first so a question I have is in what circumstance would I have to make an outline and flood consistency (for cookies) the same consistency. I thought it would be easier to use the same icing for both outlining AND flood. I hope my question makes sense. I see lots of videos where they outline the cookie then immediately flood the cookie. So I'm confused on why I would need an outline type consistency AND a flood consistency. Thank you!
You can use the second (soft/medium) consistency for outlining and flooding. The first option would be used for fine detail work/ writing and clearly defined outlines. For convenience's sake, it is easier to make one piping bag full of medium icing. However, when it comes to the intricate/smaller elements of your design, it’s best to make another bag of the first consistency since it’s not as fluid and will flow at a slower, more manageable pace.
Weena Villarreal your comment is so sweet. I know when I was learning it was all very confusing. So I wanted to do what I could to break it down in an easy way. I’m glad you feel I have done that. Make sure to check out my easy royal icing recipe video for more icing fun. Thanks so much for watching!
Very nice... it helps to know how to actually arrive at the consistency I need. Now I need to tackle writing consistency! If you have a toot on that, it would greatly improve my writing on cookies. Thanks
Yes there is a volume issue with this video. It was free editing software before I really made the investment. Since people can just turn down the volume, I didn't think it was fair to take away the video and have subscriber miss the content.
Primarily are use the bottles because they're more environmentally friendly. I already feel like I toss so many for my thicker consistency icing. I feel guilty that I no longer use reusable piping bags out of sheer convenience. Thanks for your comment and watching!
New subscriber! Love this color, one of my very favorite. Thanks for sharing your knowledge and experience! Look forward to seeing more of your videos!!
KIMBERLAND it’s one of my favourite colours too. I have it all over our home. You’re very welcome. I really enjoy sharing my knowledge to entertain and help others. I look forward to creating new content in the new year. Thanks so much for watching and subscribing!
Ines Berjon thank you so much for your kind comment. I know when I was learning I just wanted someone to give me a simple break down. Now, when I share, I strive to give that experience. I’m glad you found his video helpful. Thanks so much for watching!
Although cakes and cupcakes are yummy, I am known as the cookie girl. But I’m sure there some other bakers in the UA-cam world for the other goodies. Thanks for watching!
That is odd that you are having an issue. The link works when I and other friends click it. You can also find the video under the videos list or recipe play list for my channel. Here's the link here in case you want to try it again. ua-cam.com/video/zTv1HYLH0A8/v-deo.html Here is the icing recipe: ICING RECIPE 4 CUPS icing sugar (recommend from bulk barn - not the bag from the grocery store) 3 TBSP of meringue powder 6 to 9 table TBSP of water You'll need a good stand mixer for best results (whisk or a hand mixer will work too). It can be tricky as temperature and humidity in the air impacts your icing. Get the mixer going with the dry ingredients at low/medium speed and add water gradually as it mixes. Don't let it get too watered down but all the dryness should be gone before you speed up the mixer. You'll want to beat it for a good 3-6 minutes until it feels smooth when you run your spoon through it but stiff enough to make peaks that hold. For the flooding icing; make the icing the way you normally would. Scoop some icing into a bowl and slowly add bits of water. Go slow and don't over water. To test draw a line in the icing and see how long it takes to flatten out again. If the line goes away before 10 seconds it's too thin. The goal is for the icing to take 15-18 seconds to flatten out. Thanks for watching!
That is a great question. If you are using my recipe, you can always just add a little bit more icing sugar to stiffen it up and if you want to make sure that it's going to dry hard enough you can always sprinkle in a little extra meringue powder. But go very light with that. Focus mostly on adding more icing sugar to get a thicker consistency and whip it up! Hope this helps.
Barb H, here is the link to my video with my icing recipe: ua-cam.com/video/zTv1HYLH0A8/v-deo.html I also have recipes for sugar cookies and more. Just click videos under my channel to find all the fun! Thanks so much for watching 😊
Hey Yvonne Muhwati, Not sure I really understand what you mean but I’m happy to help. Do you mean your icing is chunky? Or too stiff and you want it to be more liquid? Let me know and I can give you some tips.
Yvonne Muhwati you can thin out the icing by adding more water. Add it slowly though, as it can get too runny really fast. You can see what I mean as I make flooding consistency near the end of this video. Hope this helps. Thanks for watching!
Hello Ntsiki Ncomanzi, To see me decorate Father Christmas' (Santa Claus) face, please check out this video link: ua-cam.com/video/Yz7wfnOLr6A/v-deo.html Hope this helps. Thanks so much for watching!
Hello, I'm good thank you. I decorate father Christmas' face in a Christmas episode called 'Traditional Santa Claus Tree-o'. Thanks so much for watching!
Hey April Showers, you could but it will take a lot more scribing (the sharp tool) to move the icing around to fill in gaps and you may find you don’t get as even of a dried surface. With the icing being so much thicker, you will burn through it faster too. That being said, you do you. If you’re more comfortable with medium consistency, do it up! Hope this helps. Thanks so much for watching.
Reanna Torres great request! I have the link at home. When I get there I will comment here so you can check it out. Hope this video was helpful. Thanks for watching!
OK, here are some links with the bottles I use (or ones that are very close): This is the pack I bought - I didn't get it off Amazon though, I found it at Home Sense: www.amazon.com/YOUDirect-Cake-Decorating-Set-Dispenser/dp/B075B29SSN/ref=pd_lpo_vtph_79_tr_t_2?_encoding=UTF8&psc=1&refRID=BBQQC6ZYFBV0TZ7AVCBM This is a site I use for many of my cookie cutters, tips and tools. Why not? Hehehe. Sorry. To be serious, I like that they can stand on their own and not leak on the table and they are more environmentally friendly than disposable bags. The bottles hold a lot of icing too. I do use bags sometimes but mostly when it's just a small job.
I am laughing really hard because you are right. This was back when I was using free, awful editing software.. I am so sorry if it hurt your ears. I wish there was a way to adjust it once it was posted.

Writing with icing!
Valerie Castro is writing with icing a technique you'd like to see? If so, I can help with that once my channel is back from my maternity break.
