I’m not saying that they’re doing it wrong because it’s obvious that they know their shit, but i really really want to know if that’s really burned butter and if you sift out the solids is still usable as it seems from the video

Yes, it's burnt butter. It gives a nutty taste. Many recipes call for burnt butter.
