Mr. Pepin is the quintessential gentleman, a true example of how to live your life. You can tell how much doing this show with Julia meant to him and how he carries them through each dish.

Very useful insight and advice on the pommes soufflées. They've always seemed unpredictable when I see other people make them (and the one time I tried to make them). So I thought we would see some kind of fool-proof method. But instead, a lesson in managing uncertainty. There's a valuable nugget there.

I have long adored and learned greatly from both, individually, and as a fun, happy team. But the one thing I will always disagree with is smooth, creamy mashed potatoes. When I see them prepared this way, I turn them away. I still have teeth. When I eat, I prefer to have something to chew - at least a little bit. Not, what is essentially baby food. So it's always chunky mashed (not pureed) potatoes for me; with bits of bacon or ham, maybe pieces of mushroom, chopped leeks, roasted garlic, even finely chopped / steamed broccoli. Something to expand the flavor and give some texture to eat. Anyway, everything else, I absolutely bow to the masters of kitchen fun. :-)

I love to take Idaho potatoes and rubbed them with good bacon grease and bake them. For mashed I use butter and a can of evaporated milk it makes it really rich.
Ah, yes. I hate chemicals in MY FOOD. Just give me potatoes with a water-in-oil emulsion (Dihydrogen Monoxide and triglycerides consisting mostly of Oleic Acid, Myristic Acid, Palmitic Acid, and Searic Acid), Sodium Chloride, and an insanely complex spice that's composed of all the macro nutrients, a couple different minerals, and more flavonoids and phenols than you could count on your own hands. Chemicals in my food BAD! Unless they have collaquial terms like "Salt" or "Water" then chemicals okay.
