This is awesome, another next level pizza, or next level vegan pizza I shall say. Vegan myself, been using your method for dough since day one of your YT channel. It does not take much to make dough vegan, as only honey has to be substituted. For toppings, this is where one's creativity shines, or just go regular plus plant-based substitutes. So far the number one, my friends approved, is white base (plant-based yogurt, Greek style preferably, Philadelphia plant-based spread with fine grated fresh garlic, rub in some salt and leave it to juice up for 5mins to get spiciness out), with parboiled spinach and plant based cheese.
Vegan Parmesan cheese: 1 C of cashews, ground; 2 garlic cloves, crushed, 1 tsp of salt. Keep it in the fridge for up to 2 months. Enjoy it on everything, even on pizza! :)

Amazing pizza, I’m gonna try it! To be truthful you have to see if the pesto has Parmesan in it (original recipe has it in pesto), otherwise it’s not vegan 😂 But actually it’s an amazing idea for a different taste💡

Follow Your Heart mozzarella shreds are the best vegan cheese for pizzas.
Miyoko mozarella is my go to. She also makes a smoked version. Follow Your Heart is good too.
You can also make your own from scratch recipes.
To recommend the same amount of fresh yeast as dry yeast is not correct. Usually, fresh yeast is about double or triple the amount of dry yeast.

Vito traditionally uses honey in the poolish which makes it not vegan, but this really can be substituted with any invert sugar syrup.
