I hope that the foil tape you used specifically states that it is food-safe. Normal HVAC foil tape from the hardware store is definitely not food safe.

I always just use gel but I'm not a professional or anything. It's worked for what I need it to do

I glued the cake board the cake is sitting on to the structure, not the cake

Wouldn't it been okay to have made the base with Rice Krispie treats instead of styrofoam? At least that way the base could be eaten, too
Rice cereal is not very good for supporting weight :) Solid chocolate could work if you could find a nice mold

I don't think you would be at risk, most people wouldn't eat unflavored fondant off of the board, and the cake board protects the actual cake.
