    We used to make this all the time when I was little. Sometimes my daddy would take the fried chicken and put it back into the gravy and cook it for a few minutes! Whew that was some good eating!!

      People used to put the chicken back in the gravy to simmer to tenderize the chicken. A chicken that was a little older wasn't as tender as a young chicken, thus the need to put it back in the gravy. It sure made for great eating, much like Country Style Steak!

    Thank you SO MUCH. My mother passed away abruptly a few years ago and I never got the chance to learn to make gravy this way. I've been longing for this. This is EXACTLY the way she made hers. Thank you for making me very happy. I can't wait to make it myself.

      Amocoru At 75 my Mom had a stroke and was never able to help me cook again so I know the feeling. She lived 11 more years and I tried to make things for her that I knew she loved. I could tell by the look on her face if I was successful!

    Just made this with her fried chicken recipe ; I made baked potatoes to go along with it all. The gravy is to die for. This is down home country cooking that is getting more rare as the years go by. Try this.

    Thanks so much for sharing this recipe. My mother used to make this gravy after she fried her chicken. She was from a small town near Shreveport, Louisiana. She passed in 96. Until now this recipe has been a lost treasure. Loved this gravy over rice or mashed potatoes. This and pan fried chicken(prepared just like your method) tops the list of my childhood favorites.

    I just stumbled upon this video quite by accident.... but wow! The memories flooded my mind and heart to the point of tears. Memories of being a little girl and watching both of my grandmas and mom make fried chicken gravy in their iron pans. Exactly how you demonstrated.     that's how my mom did it. She would always make mashed potatoes with fried chicken and would use the leftover potato water to the gravy.

    My mom did it the same. She would brown onions in the oil before adding the flour. She would leave a few pieces of chicken behind and let it sit in the gravy for few minutes. She called it mulled chicken, I think. I loved it especially the neck and for some reason I just cannot do it right. Nice job!

      The onions sound like a great addition. I've seen people put the "boney" pieces, neck, back, etc in the gravy and simmer them. Now the pieces of chicken are so much bigger than they were in the 60's and 70's and that is probably why you have trouble getting it to turn out like your Mom's.

    Great demonstration and explanation. Hopefully this will inspire future generations to carry on the Brown Gravy tradition. I already know how to make brown gravy, it was refreshing to see that you have the same exact method I learned from my mom, more so that fried chicken, we often had pan fried breaded round steak. OMG, I love gravy! I was raised on rice and gravy. Viva La Brown Gravy in perpetuity throughout the universe!

    I grew up watching my mom make chicken fried steak and she would gravy in the pan and she always used milk. When I fry chicken or sausage I always make gravy in the pan and use milk. I never once thought to use water! I guess it would be cheaper to use water as well as be less caloric but who is thinking about calories when you're having fried chicken! I just don't think it would taste as good!
    Perhaps back in the day, it would have taken too much milk to make as much gravy as some might have needed it to stretch!
    at any rate I think that you showed everyone who didn't know how to make gravy how to make gravy very nicely and showed them it's not as hard as they think! Thank you! 💐

    Now this is pretty much how I remember being taught. It is amazing what you forget when you stop cooking. LOL. Now if only I could remember how to make my mom's tomato based roux that starts out using the oil and flour and some tomato paste seasoning etc...guess I should get to experimenting.

    only difference Momma did, was a glass of water and a glass of milk, onion....but exactly how youre cooking it.....the BEST on rice, biscuits, bread, chicken, anything....i can smell it from here...sure do miss Daddy saying grace at the head of the table before eating...still remember every word in his prayer...TEARS

    Ma'am, I love that you "cook by feel". Exact measurements are fine in a professional kitchen but I don't cook in a professional kitchen, I cook at home where I don't have all the fancy measuring devices. Gospel bird! that's fantastic, I love the south!

    On behalf all men out there I do apologise, you definitely stated that you were not making milk gravy. Hey as as woman you know all men have selective hearing!!!! I watched you video again after reading your comment and deffinaly heard your disclaimer. Some of us hillbillies are slower than others and for some reason I was not put at the faster end when I was created.
    Now I have got to say since I have a better understanding of what you were doing, that you performed flawlessly. You executed every step with perfection. And thank you so much for showing the importance of Browning the roux.

    Heaps of people i know who have worked at KFC have told me that KFC makes it exactly like this, they get the leftover bits form bottom of the fryer, and turn it into the gravy you get in your zinger box, spot on

    Just like I make it, which I learned from my mom. ALWAYS had this meal with white rice. I'm actually making this tommorow night. Sometimes, if I have it on hand, at the last minute I will add a little heavy cream. Crunchy bits are the best part. We also had this with pork chops..gravy and rice. same way.

    I do mine different I use water if I'm out of milk and not as much grease. It looks yummy. I make mine thicker and make white bread sandwiches with the gravy...

    This is how I make mine but I saute onions in the oil first. I also use chicken stock instead of water sometimes.

    Thank you, thank you, thank you, I was looking for this way of making gravy. My elders tried to coach me over the phone with out success. Watching your video brought words to light for me. About to make Beef liver with onions and gravy. I will be using those droppings. lol

    Pro Tip: dont add all the liquid at once! Add about 2/3rds of what you think it needs, let it come up to a thick consistency and then add enough water to get to what you want!

    I've never made gravy with the residue of Southern fried chicken before. It looks great, but with the greatest of respect to a wonderful cook, I'm not convinced there's enough chicken there to give the gravy much flavour. I would have used chicken stock rather than just plain water to make the gravy.
    The ingredients of your gravy are very limited - vegetable oil and a few deep fried chicken bits from the earlier fry, with flour and water added - and that is not a rich or especially flavourful combination. I'm convinced this gravy requires chicken stock, either prepared with a bought stock cube but preferably home made chicken stock which is guaranteed to make everything you add it to taste delicious!
    Thank you for your fantastic recipe for fried chicken, which I am going to follow today to use up some chicken breasts. May I ask you a question - I don't have a kitchen thermometer, is there another way to check if my oil is hot enough to put the chicken into? Many thanks for all your hard work, you have created an excellent cookery channel. I just found you on UA-cam and will be binge-watching all your videos this week! Much love from a fan in the UK. XXX

      glamdolly20 feel free to add your own twist to my gravy to make it suit your taste. I did use my seasoned flour to make the gravy. If you don’t have a thermometer to test the oil for frying chicken, you can drop a pinch of flour in to see if it sizzles and sometimes, I grab a large wooden spoon and stick the handle straight down into the oil. The oil should create bubbles around the handle if it is hot enough.

Of course we all have unique recipes and do things our own way, that's what's so fascinating about watching cookery channels like yours. I'll be watching many more of your recipes here on UA-cam and look forward to picking up many more tips!
      I'm making your fried chicken recipe later today. Other recipes I've seen use an egg or egg/milk/water wash in addition to the flour, but I fear it would make the coating too thick. Your finished chicken looked wonderful, with just the right amount of crispy coating!

    What I love about cooking is the different methods. Gravy, to me. Leftover Fry up some vegetables diced real real thin and add some stock of choice. Keep them moving fast as you stir then quickly add cold water. Not much. Now stir on a low heat and let it stew. Cover the pot.The veg has become soft, but crunchy and the gravy becomes a thick jus and not a runny water my british neighbours seem to make. It needs to be thickish not sewer water brown flavored. Drizzle it over some rare steak. Two roasted parsnips as dressing. Oh and herbs. Parsley or thyme for chicken. Rosemary for beef, venison. Boom. Everyone goes " mmmm that sauce was great" you get to pretend its a secret recipe and its all the residue of your meal.
