Im so glad youre posting on this. Ive been wanting to make it for the family to cure what ails us over the winter. Ive dehydrated my hot peppers and theyve been waiting for their honey bath. My breathing issues after having covid 4x wont allow me to do the hot peppers in a blender like you do. Im gonna try the dry this first year.
The strainer bag will be something I incorporate next year, and plan on growing my own peppers,too What ratio of peppers to gallons of honey are a good place to start?
I would think that you could use any of the hot pepper extract oils, but you wouldn't get much flavor mostly heat. If you use dehydrated peppers you will get the oils with out getting the moisture, just takes longer. Wonder if freeze dyed peppers?
I made a 5 gallon batch using your tips and it came out amazing. I was careful with how many peppers I used and let it sit longer and it’s nice and spicy and tastes amazing. Should be a good seller.

Gus, how are you controlling the moisture content on the finished product? It looked like the 5 gal bucket didn't have a lid on it when you opened the insulated cabinet. Are you just letting it evaporate with the lid off in the hot box? And thanks for all the time you put into your videos.
watching this video gus cause i tried to add jalepenos to jar ,fewmnths and was pressurized jar deforming the lid, and w peroxide, i spooned off,seemed to thin the viscosity too, checked moisture ,and still 17-18 %

I charge $8 for an 8 oz squeeze bottle(retail). The only other sizes I sell are 1 gal, 5gal. You have to figure what you need to make and go from there, better to not depend on others pricing, thought it’s good to reference.
Bring some to conference with you in January an I'll do a hot honey swap with ya !, I use extracts in mine , it's so easy to make., it's all about the amounts for sure!!!

The super hots are more oil than juice.
Definitely going to try this! Got a buddy that has some extra habanero x reaper peppers. Not looking forward to that blending though!

Did you use any dried chili pepper powder or all fresh peppers. What is the longest amount of time you let the peppers infuse?

I start with a lower moisture honey, and I also do leave the lid off for that reason 👍

Maybe calibrate your refractometer, sounds like you had some fermentation.

Have some honey to blend that's got a low moisture content ready. I think Gus dries his uncapped honey with a box fan.

Pepper Pride in Ga, then I’ve saved my own. I had Rolling Along Farms grow out my pepper plants this year and then bought back from them.
What do you find is the premium on hot honey? Like if raw honey is $10 is hot $15 or more?

Yes, I’m packed up, I have some hot honey and trade honey, I didn’t bring empty frames but Skip will be there.
