    I've been on a 5 year journey to create the hottest fermented hot sauce possible, and this time, I think I've actually done it. Farm fresh Ghost peppers, grown here in my garden in TN, give this sauce a spicy kick that you would not believe. This ghost pepper hot sauce uses lacto fermentation to improve the flavor and complexity of the resulting sauce, not to mention, fermented foods are really good for you too! Make sure you head on over to my website for the full hot sauce recipe. Learning how to make hot sauce is probably the easiest fermentation project because there's a whole lot less to pay attention to, but you still get those good probiotics and up with a killer hot sauce you can use to challenge your friends. Though this fermented hot sauce delivers a ridiculous kick, it really does add a lot of flavor when you add it (in small quantities) to chilis, soups, sandwiches, sauces, salads... I mean... everything you'd normally put hot sauce on. Keep breathing fire my friends!

    VERY IMPORTANT UPDATE: Adam almost put the entire batch of hot sauce on his pasta last night because he thought it was tomato sauce 😂😂😂 I truly regret stepping in and not just filming him taking that first bite.

      I enjoy the videos where you cook, whether it's in the kitchen, out by the pizza oven or at your Mom's side. You seem to be in a relaxed, peaceful place when you create something in the kitchen.

    This brings back a memory for me Anne... Parents owned a pizza/Italian restaurant when I was young. A delivery guy asked for a personal pizza (6 inches) so he could eat on the run between orders... I took a whole shaker jar of red pepper seeds and put them between the sauce and cheese. Adding a can of anchovies under there for good measure, I topped the pie with pepperoni and mushrooms, sprinkled a little onion, and green pepper for added flavor.. After baking, I presented the pizza to the delivery driver... His reaction? A little less intense than yours to your hot sauce, but imagine my surprise when he ate the entire pizza and didn't bat an eyelash!!

    Interesting technique. I generally ferment mine with the white vinegar. I bring to boil my peppers with salt and vinegar. Then toss into the food processor and puree. Then pour into a mason jar and put a lid on it in the fridge for 2 weeks. Two weeks later I pull it out and run it thru a hand sifter, separating the solids from the juice. I funnel the juice into an empty hot sauce jar for storing in the fridge.

      The fridge is generally too cold for true lacto-fermentation to take place, but the flavors will certainly combine with that method.

    Subbed from Permapasture Farm. This was the first video I chose to watch because it's relevant right now 👍🏼, The pepper plants KEEP producing peppers and I want to improve on what I did last year!
    Last year's gallon of hot sauce served to rid skunks of their home in my wood pile, LOL! It worked (with the help of my mini cross bow practice 🏹 to deter them from coming back "home")
    Anyway... thank you for the recipe albeit a bit milder, cayenne and red jalapeños. I wanna eat my hot sauce this year, and not have to keep giving my money to Frank.🤣
    I'm starting it tonight.

    Ghost peppers are delicious. There is a restaurant in Maine called the Sunday River Brewing Co. Last time I was there, they had a ghost pepper burger. The meat had bits of ghost peppers ground in, there were slices of roasted ghost peppers layered on top and then some ghost pepper cheese to top it off. Took me an hour to eat it but it was delicious! Thanks Anne!

    Oh Anne my eyes 👀 started watering as soon as you moved in for the smell test, im not a lover of spicy food in anyway shape or form but wow your one brave lass knowing how strong ghost peppers are supposed to be but yet you still had to get a close up smell!!!.

    You should take those cut off scraps dry them out and use them for powder out in the garden next year it’s a great insect repellent and rodent repellent,Also handy around the house and your flower garden and if your like me, you had an over abundance of hot peppers this year, I just dehydrated, ground them in the coffee grinder and got a lot of flakes and powder out of them awesome

    I grow my own chilly in Thailand and make my own vinegar too
    It’s easy to make these mojo picon sauces but you should not be testing it from a spoon. Lol you need small pieces of bread to sample and enjoy the Bouquet
    Also please try it with coconut oil and Cilantro salt is also important no need to keep fermenting things fresh is good and you won’t eat it all at once so it’ll have plenty of fermentation time
    and it’ll taste different with each stage it goes through those are my tips oh and try not to make to much of it it’s always better in small quantities

    I love hot sauces. I made my own once w/ habeneros I had grown, but I took the time to remove the seeds. If I ever do it again, I'll use your approach, including keeping the seeds. Thanx for sharing!

    I usually cut the super hot pepper sauce’s with some thing not at all hot like carrot or a fruit of some sort maybe pear or apple. Love your channel!

    A good rule of thumb is to do 1-2 percent salt of total weight of product to ensure proper ferment

      I do 25%, with peppers you have a lot more wiggle room, but I’ve got a video explaining lacto fermentation process for other veggies in much better detail coming soon.

    I lived in Japan. I got accustomed to some spicy food. I've since moved back to Kentucky, and really lost the drive to burn my mouth out.

    I make some with habanero and jalapeno peppers. That is plenty hot enough for me. Plus I like the flavor of the habanero. :)

    I make mine very similar with the exception of I like to add some powdered chocolate and some other spices to mine. I even make hot oil with ghost peppers.

    Make some home made cheese and chop up some of the ghost peppers (to taste) mix them in and use the mixture on burgers for a Halloween party, works well on pizza too. Always remember "if your eyeballs don't sweat it isn't hot enough". Love from Texas!

    Hot sauce, I thought I could eat hot peppers in Oregon! I went into South, I found I didn't know what "Hot" meant?! Then my cousin send me some hot sauce from Columbia, Mmmm! But I use drops where I use to splash!

    lol tip for peeling ginger (especially when fresh), just use a spoon edge and rub/scrape off the gingerskin ^_^

      Absolutely! The plain ones without soap are basically made from woven nylon that has been texturized by partially melting during production. I haven't peeled a carrot in YEARS.

    Hot pepper capsaicin dissolves in fats. So don’t make the mistake of trying to cool your mouth with fat free milk. Whole milk or cream is what you want. Or even better vegetable oil. If you cut up peppers without gloves and your hands feel like they are burning away. Soak them it vegetable oil to pull the capsaicin out of your skin.

    OLD LEATHER SMITH here, I make my own HOT PEPPER, I GROW, DRY BY THE SUN, and GRIND, peppers, jalapeno, habanero, ghost, chilly red, cayenne 160, I grind up everything except the seeds I will use next year, this year I am cross pollinating GHOST/HABANERO 2 C 4 next year's pepper and seeds, sorry 4 long winded, GOD'S BLESSINGS ✝️⚾🙃

    If the hot sauce doesn't turn out delicious enough you could always switch it up to pepper spray. Judging by your reaction when you sniffed the pot it should be effective as a self-defense tool.

    You want your peppers to give you jar them in olive oil, dice up a bunch of your hot peppers then put them in pint jars and put olive oil on them and place the jars in boiling water for 20 minutes then remove and let cool.

      Just don't use the hot peppers in oil to fry with you could land yourself in the hospital. My nephews buddy thought it would be ok to fry his eggs in them and couldn't breath he told me.

I've always done woodworking since middle school and woodburning in high school. So it's fun learning new thungs.

    The sauce is better if you take half the peppers, cut it in half and remove the seeds. Cuts some of the heat and allows more flavor come through. You should have safety glasses on while working with them. It’s not fun if you get a little splash in the eye. Thanks for sharing.

      "better" tasting, probably yes. "Hotter," no. The majority of the capsicum which makes peppers spicy is contained within the seeds. You're right I forgot my face shield for this one!

    I love my habanero sauce and enjoy it almost daily. Very rarely do I reach for the ghost pepper sauce, not enough flavor and too much heat IMO.

    Love your comment on thinking about what you're doing, and the things you can do during other things. Check out a concept called critical path. It's the longest step of a process in lean manufacturing terms. Highly applicable to the kitchen and woodworking I've found.

      Oh yeah I'm all about cross pollinating other business and manufacturing processes into my farm, woodshop and kitchen. One of my recent favorites is Scrum and Kanban from software development. It's helped the stuff I do here immensely.

      Kanban is such a great concept! Haven't had much of a chance to look into Scrum but I know it's on many IT manager's resume. If you guys are the only one doing the work, it may not be as helpful but standard work is a great way to do something the same way! We jokingly fight about folding linen here because we do it differently.
      If you aren't already listening to it, and you have the time, check out Gemba Academy podcasts. Tons of cross pollinating ideas like you mention of different ways to bring improvement into many industries & situations.

    Call me a wimp, but I make my hot sauce with ripe Jalapenos. Anything hotter is just punishment. Salted and fermented for at least a year, with some Garlic, and maybe Ginger and Turmeric, then blended, strained, thinned with vinegar and Lime juice, and bottled in those shake bottles. Hot enough and good enough for me.

    You must really enjoy pain lol. A friend of my wife and mine made a hot sauce last year that was kind of similar to yours except it was mostly habanero peppers, there was a few ghost peppers in it to though. it was almost unbearable even though we both have a pretty good spice tolerance or so we thought lol. You should try competing in one of those hot sauce challenges where the sauce gets hotter and hotter with each sort of step lol.
