I've been on a 5 year journey to create the hottest fermented hot sauce possible, and this time, I think I've actually done it. Farm fresh Ghost peppers, grown here in my garden in TN, give this sauce a spicy kick that you would not believe. This ghost pepper hot sauce uses lacto fermentation to improve the flavor and complexity of the resulting sauce, not to mention, fermented foods are really good for you too! Make sure you head on over to my website for the full hot sauce recipe. Learning how to make hot sauce is probably the easiest fermentation project because there's a whole lot less to pay attention to, but you still get those good probiotics and up with a killer hot sauce you can use to challenge your friends. Though this fermented hot sauce delivers a ridiculous kick, it really does add a lot of flavor when you add it (in small quantities) to chilis, soups, sandwiches, sauces, salads... I mean... everything you'd normally put hot sauce on. Keep breathing fire my friends!

VERY IMPORTANT UPDATE: Adam almost put the entire batch of hot sauce on his pasta last night because he thought it was tomato sauce 😂😂😂 I truly regret stepping in and not just filming him taking that first bite.
Since you're here, if you like this video, you'll probably like this one too: ua-cam.com/video/y0zW7oibx-Q/v-deo.html
Hahahaha, well hey at least your priorities right ;) It's better to regret not filming it, rather than regretting not helping him ;)
I enjoy the videos where you cook, whether it's in the kitchen, out by the pizza oven or at your Mom's side. You seem to be in a relaxed, peaceful place when you create something in the kitchen.
You made me laugh out loud several times in this video. The laughter disturbed my wife as she watched her Hallmark Channel lovey-dovey show, but I couldn't help it. Thanks for posting this one. Stay safe and please, take good care of Adam's lip, mouth and tongue.
That would have been fantastic.
Straight ghost peppers? Should have cut them with 7-pot or black widow! 🔥
Wimp....I still have that challenge to see who wins in who can stand the hottest food...If you remember that challenge.
"It is not spicy" and then cough "It is delicious" in a high squeaky voice. Cough Cough.
Your channel is awesome. A big hello from Australia
Thanks so much!
This brings back a memory for me Anne... Parents owned a pizza/Italian restaurant when I was young. A delivery guy asked for a personal pizza (6 inches) so he could eat on the run between orders... I took a whole shaker jar of red pepper seeds and put them between the sauce and cheese. Adding a can of anchovies under there for good measure, I topped the pie with pepperoni and mushrooms, sprinkled a little onion, and green pepper for added flavor.. After baking, I presented the pizza to the delivery driver... His reaction? A little less intense than yours to your hot sauce, but imagine my surprise when he ate the entire pizza and didn't bat an eyelash!!
Ha! That’s great
“Everything is fine” haha oh gosh Anne haha
🤪🤪🤪
You really nailed the thumbnail
Loved the video! I absolutely love hot sauce and spicy foods.
Your channel always reminds me of how much better home cooked food is and how I need to make more time for good food.
Making time for good food is so important! It’s easy for me to forget as well from time to time.
I feel so guilty laughing as you try to talk and smile through tearful eyes. :D
haha it's ok, I was laughing to... later. Much later.
I understand, Thomas. I laughed out loud several time during this video. A thoughtful, civilized man should not laugh at the misfortune of others, huh Thomas. Even though I believe that, I still laughed. Sorry, Anne. I actually am quite fond of you. I just couldn't help it.
pt eddie oh don’t feel bad, the purpose of sharing the video was to share laughs. We can all use a few right now
Usually I don’t comment but this was pretty entertaining lol
Interesting technique. I generally ferment mine with the white vinegar. I bring to boil my peppers with salt and vinegar. Then toss into the food processor and puree. Then pour into a mason jar and put a lid on it in the fridge for 2 weeks. Two weeks later I pull it out and run it thru a hand sifter, separating the solids from the juice. I funnel the juice into an empty hot sauce jar for storing in the fridge.
The fridge is generally too cold for true lacto-fermentation to take place, but the flavors will certainly combine with that method.
@@AnneofAllTrades I guess I need to do more research on that. Thanks!
Subbed from Permapasture Farm. This was the first video I chose to watch because it's relevant right now 👍🏼, The pepper plants KEEP producing peppers and I want to improve on what I did last year!
Last year's gallon of hot sauce served to rid skunks of their home in my wood pile, LOL! It worked (with the help of my mini cross bow practice 🏹 to deter them from coming back "home")
Anyway... thank you for the recipe albeit a bit milder, cayenne and red jalapeños. I wanna eat my hot sauce this year, and not have to keep giving my money to Frank.🤣
I'm starting it tonight.
🌶🌶🫑🌶
My ghost pepper plants are huge this summer!!! Im going to try your recipe but im going to add some dry chili peps to it as well. Enjoyed your vid. Girl you need some MILK!!!
Hey Anne, try peeling ginger by scraping it with a tea spoon. Works great for me.
Thank you for the reminder!!
I'm glad that no UA-camrs, or their significant others, were harmed in the production of this video.
🤣🤣🔥🔥
Ghost peppers are delicious. There is a restaurant in Maine called the Sunday River Brewing Co. Last time I was there, they had a ghost pepper burger. The meat had bits of ghost peppers ground in, there were slices of roasted ghost peppers layered on top and then some ghost pepper cheese to top it off. Took me an hour to eat it but it was delicious! Thanks Anne!
Oh I need to make some GP cheese!
Love your channel Anne, When you can share & laugh with your UA-camrs. To me you are 100% real.
Thank you so much!
Oh Anne my eyes 👀 started watering as soon as you moved in for the smell test, im not a lover of spicy food in anyway shape or form but wow your one brave lass knowing how strong ghost peppers are supposed to be but yet you still had to get a close up smell!!!.
👍🇬🇧
Hehehehe it was worth it for the laugh (later)
This video made me laugh! I especially love the thumbnail pic when it appears in my feed, great job👍
So glad to hear it!
Reminded me of the Gerber Picante Sauce picture.
ha!
Heck yeah! I Love my Ghost peppers!
Scary hot! Nice job....Thanks for all you do.
Thank you! haha yes it is pretty scary
0:03 I love doing this to myself bruh
You should take those cut off scraps dry them out and use them for powder out in the garden next year it’s a great insect repellent and rodent repellent,Also handy around the house and your flower garden and if your like me, you had an over abundance of hot peppers this year, I just dehydrated, ground them in the coffee grinder and got a lot of flakes and powder out of them awesome
Oh yeah dehydrating and powdering is another fun treat, but I advise you do it outside 🤣🤣🤣
I grow my own chilly in Thailand and make my own vinegar too
It’s easy to make these mojo picon sauces but you should not be testing it from a spoon. Lol you need small pieces of bread to sample and enjoy the Bouquet
Also please try it with coconut oil and Cilantro salt is also important no need to keep fermenting things fresh is good and you won’t eat it all at once so it’ll have plenty of fermentation time
and it’ll taste different with each stage it goes through those are my tips oh and try not to make to much of it it’s always better in small quantities
I love hot sauces. I made my own once w/ habeneros I had grown, but I took the time to remove the seeds. If I ever do it again, I'll use your approach, including keeping the seeds. Thanx for sharing!
Cheers!
OMG the sniff of the freshly blended pepper mix made me gag a bit, but then I laughed 🤣😋
hahah I didn't laugh until much, much later ;P
I usually cut the super hot pepper sauce’s with some thing not at all hot like carrot or a fruit of some sort maybe pear or apple. Love your channel!
Haha yes if you wanted to eat it that would be a great idea :P
That is the idea right?
Hahaha this is awesome!
Glad you enjoyed it!
A good rule of thumb is to do 1-2 percent salt of total weight of product to ensure proper ferment
I do 25%, with peppers you have a lot more wiggle room, but I’ve got a video explaining lacto fermentation process for other veggies in much better detail coming soon.
Being a Texas boy, I'm always looking for the good spicy sauce. That looks GOOD!
It's pretty wonderful. I've been timidly adding it to my cooking for the last couple weeks and it's delightful.
I lived in Japan. I got accustomed to some spicy food. I've since moved back to Kentucky, and really lost the drive to burn my mouth out.
Enjoy your sauce!
I make some with habanero and jalapeno peppers. That is plenty hot enough for me. Plus I like the flavor of the habanero. :)
Haha it’s delicious!
Time for some Nashville Hot Fried chicken!
I appreciate the hot ones styled sound effects when you tested the ferment 😂
hahaha :)
I usually do not peel ginger that isn't a million years old with woody exterior.
I grew habanero peppers once.
Never made that mistake again!!
Hahahaha
Use a teaspoon to peel ginger, so much easier, less waste.
I can’t believe I forgot about that trick. Probably because I’m usually too lazy to even peel it 🤣🤣
When, I saw you trying to keep yourself as normal as you can after your spoon taste , I knew you had strong pepper recipe...Welcome in Tennessee. 😁😉.!! In french west indies we keep pepper in sunflower oil😉🌴🇫🇷🌴 for month.
Oh nice!
I make mine very similar with the exception of I like to add some powdered chocolate and some other spices to mine. I even make hot oil with ghost peppers.
Oh yeah chocolates with peppers is a popular way to go. I personally don't like chocolate, but that's a personal issue I'm battling ;P
@@AnneofAllTrades I'm not big on sweets either but chocolate is a great seasoning for spicy stuff, I even put a little in my chilly when I make it.
Прекрасна си какво винаги и ми повдигаш настроението за деня и смятам че живота е едно хубаво нещо.....
So glad to hear it!
@@AnneofAllTrades Удоволствието е мое
Courage and a spirit of adventure bring a keen admiration for spicy foods and peppers....it is a bit like enjoying the hot summer afternoon sun on the tip of your tongue...enjoy, as it looks delicious and must taste amazing...
ha! I think you're right!
great recipe, i will try it. Do I have to keep it in the fridge for 3 days to 2 weeks or can it stay outside? Thanks
Hi Anne next time use a spoon to peel ginger use the rounded part of the spoon and scrape it off
I totally forgot about that
4:54 the moment Anne realized she made a terrible mistake..... (instantly) lol... fun times....
hehehe
Make some home made cheese and chop up some of the ghost peppers (to taste) mix them in and use the mixture on burgers for a Halloween party, works well on pizza too. Always remember "if your eyeballs don't sweat it isn't hot enough". Love from Texas!
I love a little ghost flake in my goat cheese. Delish
I'm also making very spicy sauce. I haven't tried your way. Have to try it. I have used Carolina reaper but haven't been happy with the spiciness. Must try your method. 💥
Moar seedz!
I'm one of those people who can sweat just thinking about those peppers. Watching this video I had to get a towel.
Hahahaha
Anne have you ever peeled your ginger with a teaspoon ? it is very fast and alot easier than a knife.
Gah! I totally forgot about that trick!
No outtakes??? I feel cheated LOL you are a brave woman! I wouldn’t get anywhere near that!
haha we are trying a little thing where we include them in the video for the next few, folks didn't seem to want to stick around till the end and I'd hate for them to miss them :)
Mmmm I need this sauce in my life. BTW you can take the juice from another fermented and use it as a starter.
Very true!
Im 15 and im trying to make it
I want this pepper 🌶️ how I can get it I'm in Lebanon I need this one
I think your ability hilarious in a good way. Super brave for tasting it like that LOL at it's hottest. I to grow lots of super Hots and know your pain. Keep up the good work .
Best way to peel ginger.......with a spoon.
Gloves are a must. Hands are not that sensitive but when you use the bathroom after you will not forget the gloves next time!!!!
🤣🤣
Don’t tell me you left the little knife you made in Seattle. Love that thing.
Oh it's here. I need to sharpen it. And pretty much every other knife I own haha
Ye gods lady you are a brave soul, taste testing that spicy concoction. I would venture a wager that stuff not only clears ones sinuses it can also strip wallpaper off a wall. Have you healed from the taste test yet???
Haha I’m right as rain. It’s actually pretty good when you get over the initial burn
Hot sauce, I thought I could eat hot peppers in Oregon! I went into South, I found I didn't know what "Hot" meant?! Then my cousin send me some hot sauce from Columbia, Mmmm! But I use drops where I use to splash!
hahaha funny how that works
LOL 😂
lol tip for peeling ginger (especially when fresh), just use a spoon edge and rub/scrape off the gingerskin ^_^
I totally forgot about that tip!
Under water with a scotch brite pad is both quicker and easier.
@@stanervin6108 Ohh! I've never tried that! is that stuff like foodsafe? guess I'll have to try that some time!
@@lalystar4230
Absolutely! The plain ones without soap are basically made from woven nylon that has been texturized by partially melting during production. I haven't peeled a carrot in YEARS.
@@stanervin6108 awesome! Thats really a great tip thats gonna make my life somewhat easier!
Unreasonably hot? Probably, the Hottest possible? Probably not in a world where Pepper X exists. I always wanted to try making my own lacto fermented pepper sauce and pickled Jalapeno's
As the words spoken in the princess Bride.. Lier... Lier. 😊😊😊 That some hot stuff you made...
Dnot to try this at home😂😂😂
haha true :)
Hot pepper capsaicin dissolves in fats. So don’t make the mistake of trying to cool your mouth with fat free milk. Whole milk or cream is what you want. Or even better vegetable oil. If you cut up peppers without gloves and your hands feel like they are burning away. Soak them it vegetable oil to pull the capsaicin out of your skin.
I'm offended you would think I'd ever have fat free anything in my kitchen :P
You're totally right though, that's why I was shoveling ice cream in at the end.
Straight ghost peppers!!!!?? Girl, you are tough as nails!
💪🏻💪🏻🔥🔥
sweet taste good :)
Anne, did the one behind the camera partake in any taste testing?
hahaha no, my offer was refused for some reason 🙅
OLD LEATHER SMITH here, I make my own HOT PEPPER, I GROW, DRY BY THE SUN, and GRIND, peppers, jalapeno, habanero, ghost, chilly red, cayenne 160, I grind up everything except the seeds I will use next year, this year I am cross pollinating GHOST/HABANERO 2 C 4 next year's pepper and seeds, sorry 4 long winded, GOD'S BLESSINGS ✝️⚾🙃
What did you do with all that ghost pepper sauce.?
Ate it. What else?
@@AnneofAllTradesI was just wondering since it's very hot,I was considering buying a 5 gallon 40lb ghost pepper mash from magic plant farms, it might cut down on alot of time making hot sauce.
@@eastside0434 I love hot food. No such thing as too spicy
I think next time you make that sauce Anne, wear your welding helmet. Or on second thought, next time your welding use that sauce instead of a MIG😁
Seriously though, love the cooking segments.👍
🤣🤣🤣
Anne's hot sauce is like using 10 gallons of gas to light a candle...This was fun to watch! 😂
hahahaha you know how we roll around here!
If the hot sauce doesn't turn out delicious enough you could always switch it up to pepper spray. Judging by your reaction when you sniffed the pot it should be effective as a self-defense tool.
Haha very effective indedd
You want your peppers to give you jar them in olive oil, dice up a bunch of your hot peppers then put them in pint jars and put olive oil on them and place the jars in boiling water for 20 minutes then remove and let cool.
to give you what? I think an important word is missing there ;)
@@AnneofAllTrades sorry about that with dyslexia I forget words. Meant to say to give you good heat put them in jar of olive oil.
Just don't use the hot peppers in oil to fry with you could land yourself in the hospital. My nephews buddy thought it would be ok to fry his eggs in them and couldn't breath he told me.
Moonwolf71 hey I’m dyslexic too I get it. Yeah good call on the oil, yikes
@@AnneofAllTrades I love your videos, they helped inspire me to learn more I took up woodcarving this year and I love it. Carved animals, a spoon, and done several relief carvings. I've always done woodworking since middle school and woodburning in high school. So it's fun learning new thungs.
Isn't that Moroccan Harissa?
If it is, it should be reclassified as a Weapon (Not a Sauce).
Man that's Hot❗
This could definitely be considered a weapon ;)
Can you make another video with the 3D Joel ? That's where I first saw you and because it was so cute got me hooked on your channel. Yes, I see he is other side of USA....
It sucks we aren't neighbors since we moved across the country, but Joel and I do have a video idea up our sleeves we are working on :)
The sauce is better if you take half the peppers, cut it in half and remove the seeds. Cuts some of the heat and allows more flavor come through. You should have safety glasses on while working with them. It’s not fun if you get a little splash in the eye. Thanks for sharing.
"better" tasting, probably yes. "Hotter," no. The majority of the capsicum which makes peppers spicy is contained within the seeds. You're right I forgot my face shield for this one!
I am crying I am laughing so hard. Sorry, but this is funny!!
We all can use a smile right now, so happy to share one :)
I never laugh so hard thanks Anne
So glad you enjoyed it!
@@AnneofAllTrades your welcome
I thought i could handle habanero peppers until i grew my own in prime conditions, cant imagine the nostril destruction of homegrown ghost peppers. you seemed like you were having a great day up until that point lol
hahaha :)
Do home grown ghost peppers taste better 🤔
it's hard to taste anything when your mouth is on fire haha
@@AnneofAllTradeslol I have a feeling you taken the scovil level up a notch compared to shelf brough challenge products.
I love my habanero sauce and enjoy it almost daily. Very rarely do I reach for the ghost pepper sauce, not enough flavor and too much heat IMO.
Have you tried fermenting it? It really adds a ton of complexity to the flavor.
@@AnneofAllTrades I have never done so and I trust you wholeheartedly so I will try.
Love your comment on thinking about what you're doing, and the things you can do during other things. Check out a concept called critical path. It's the longest step of a process in lean manufacturing terms. Highly applicable to the kitchen and woodworking I've found.
Oh yeah I'm all about cross pollinating other business and manufacturing processes into my farm, woodshop and kitchen. One of my recent favorites is Scrum and Kanban from software development. It's helped the stuff I do here immensely.
Kanban is such a great concept! Haven't had much of a chance to look into Scrum but I know it's on many IT manager's resume. If you guys are the only one doing the work, it may not be as helpful but standard work is a great way to do something the same way! We jokingly fight about folding linen here because we do it differently.
If you aren't already listening to it, and you have the time, check out Gemba Academy podcasts. Tons of cross pollinating ideas like you mention of different ways to bring improvement into many industries & situations.
@@bnakoneczny I'll check that out, thanks for the recommendation!
Awesome work Anne, thanks for sharing! 🌶️🔥🌶️🔥🌶️🔥🌶️🔥🌶️🔥🌶️ 🥵🥛👍🏻👊🏻
Thanks for being here Fred!
Call me a wimp, but I make my hot sauce with ripe Jalapenos. Anything hotter is just punishment. Salted and fermented for at least a year, with some Garlic, and maybe Ginger and Turmeric, then blended, strained, thinned with vinegar and Lime juice, and bottled in those shake bottles. Hot enough and good enough for me.
Sounds pretty delicious!
What did you expect when you use Ghost Peppers & Jalapeño Pepper?! Anthony
That’s exactly what I expected
That's Hot!
haha sure is
@@AnneofAllTrades I like hot sauces until the point I can still enjoy the other flavors of the food. More than that is just when I have a cold.
@@wollinger fair enough!
I appreciate all the multitasking! Loved this. I have my mother-in-law’s kimchi on my list of upcoming videos, I imagine my experience is going to be similar to this 😂🥵

Anne of All Trades can’t wait!!
Pickle juice can kill the burn
Oh really? Interesting
Peel your ginger with a spoon 😉
I made a mistake and did not use gloves 'once'...
You must really enjoy pain lol. A friend of my wife and mine made a hot sauce last year that was kind of similar to yours except it was mostly habanero peppers, there was a few ghost peppers in it to though. it was almost unbearable even though we both have a pretty good spice tolerance or so we thought lol. You should try competing in one of those hot sauce challenges where the sauce gets hotter and hotter with each sort of step lol.
Hahaha I love spice competitions. Living in Asia really gave me a big and unexpected advantage. I am also extremely competitive, so the two can be a wicked combo
“I’m very tough... it’s not spicy... cough cough.” You sweet girl, you just started my day with a giggle. 🤗🌶😅
