This brings back a memory for me Anne... Parents owned a pizza/Italian restaurant when I was young. A delivery guy asked for a personal pizza (6 inches) so he could eat on the run between orders... I took a whole shaker jar of red pepper seeds and put them between the sauce and cheese. Adding a can of anchovies under there for good measure, I topped the pie with pepperoni and mushrooms, sprinkled a little onion, and green pepper for added flavor.. After baking, I presented the pizza to the delivery driver... His reaction? A little less intense than yours to your hot sauce, but imagine my surprise when he ate the entire pizza and didn't bat an eyelash!!
A couple of years ago I got 10 Carolina Reaper pepper seeds from a pepper group. I don’t do hot to start with, I ended up with only one seed surviving and ended up with a huge amount of peppers. I picked them, dried them and ground them up and then gave them all away without even tasting them. I was scared to death to touch them or anything. The nice thing about San Diego, Ca is that the plant continued for a second year and was just as bountiful. Thank you for sharing!
Interesting technique. I generally ferment mine with the white vinegar. I bring to boil my peppers with salt and vinegar. Then toss into the food processor and puree. Then pour into a mason jar and put a lid on it in the fridge for 2 weeks. Two weeks later I pull it out and run it thru a hand sifter, separating the solids from the juice. I funnel the juice into an empty hot sauce jar for storing in the fridge.
I like how u maintained ur composure when u were saying u were fine, totally fine, and then booked it out of the room to come back to ice cream. Now I wanna make some hot sauce!

Ghost peppers are delicious. There is a restaurant in Maine called the Sunday River Brewing Co. Last time I was there, they had a ghost pepper burger. The meat had bits of ghost peppers ground in, there were slices of roasted ghost peppers layered on top and then some ghost pepper cheese to top it off. Took me an hour to eat it but it was delicious! Thanks Anne!

Last year's gallon of hot sauce served to rid skunks of their home in my wood pile, LOL! You should take those cut off scraps dry them out and use them for powder out in the garden next year it’s a great insect repellent and rodent repellent,Also handy around the house and your flower garden and if your like me, you had an over abundance of hot peppers this year, I just dehydrated, ground them in the coffee grinder and got a lot of flakes and powder out of them awesome
I like spice over kill me heat . I like a mix of peppers . Hungarian, sorento, jalapeno, scotch bonnets and Italian long hots . Cut in slices soaked in salt & vinegar for 24 hr. Strain pack in olive oil and a garlic glove . Boil 20 minutes . Use with eggs in the morning or anything else . Flavor Town lol
I lived in Japan. I got accustomed to some spicy food. I've since moved back to Kentucky, and really lost the drive to burn my mouth out. Enjoy your sauce! I make some with habanero and jalapeno peppers. That is plenty hot enough for me. Plus I like the flavor of the habanero. :)

I grow my own chilly in Thailand and make my own vinegar too It’s easy to make these mojo picon sauces but you should not be testing it from a spoon. Lol you need small pieces of bread to sample and enjoy the Bouquet Also please try it with coconut oil and Cilantro salt is also important no need to keep fermenting things fresh is good and you won’t eat it all at once so it’ll have plenty of fermentation time and it’ll taste different with each stage it goes through those are my tips oh and try not to make to much of it it’s always better in small quantities
Make some home made cheese and chop up some of the ghost peppers (to taste) mix them in and use the mixture on burgers for a Halloween party, works well on pizza too. Always remember "if your eyeballs don't sweat it isn't hot enough". Love from Texas!

I make mine very similar with the exception of I like to add some powdered chocolate and some other spices to mine. I even make hot oil with ghost peppers.

Totally insane!🥵 My aunt made fermented hot sauce using some super hot peppers but did it without wearing any gloves......BIG MISTAKE!!! A trip to the E.R. and having her hands wrapped in gauze bandages taught her to always wear gloves!! Nasty stuff, can't even imagine having this sprayed in your eyes!

Hot sauce, I thought I could eat hot peppers in Oregon! I went into South, I found I didn't know what "Hot" meant?! Then my cousin send me some hot sauce from Columbia, Mmmm! But I use drops where I use to splash!

That is an excellent point, I’ve seen some folks continuing the aging process after adding the vinegar but I actually don’t know the science behind what they’re trying to do there, because you’re right, vinegar will stop the ferment.

I thought i could handle habanero peppers until i grew my own in prime conditions, cant imagine the nostril destruction of homegrown ghost peppers. you seemed like you were having a great day up until that point lol
Unreasonably hot? Probably, the Hottest possible? Probably not in a world where Pepper X exists. I always wanted to try making my own lacto fermented pepper sauce and pickled Jalapeno's
Hot pepper capsaicin dissolves in fats. So don’t make the mistake of trying to cool your mouth with fat free milk. Whole milk or cream is what you want. Or even better vegetable oil. If you cut up peppers without gloves and your hands feel like they are burning away. Soak them it vegetable oil to pull the capsaicin out of your skin.
I'm offended you would think I'd ever have fat free anything in my kitchen :P You're totally right though, that's why I was shoveling ice cream in at the end.
You want your peppers to give you jar them in olive oil, dice up a bunch of your hot peppers then put them in pint jars and put olive oil on them and place the jars in boiling water for 20 minutes then remove and let cool.
Just don't use the hot peppers in oil to fry with you could land yourself in the hospital. My nephews buddy thought it would be ok to fry his eggs in them and couldn't breath he told me.

If the hot sauce doesn't turn out delicious enough you could always switch it up to pepper spray. Judging by your reaction when you sniffed the pot it should be effective as a self-defense tool.

Anne to clean the ginger my sister taught me to use a teaspoon to scrap the ginger. You could use the hot sauce to make Korean kimchee.
Kimchi uses slightly different peppers but incidentally I’ve got a video on that coming up soon ;) stay tuned!

Once you add the vinegar it stops the lacto fermentation from happening. Ghost peppers make great tasting hot sauce!
That is an excellent point, I’ve seen some folks continuing the aging process after adding the vinegar but I actually don’t know the science behind what they’re trying to do there, because you’re right, vinegar will stop the ferment.
lol tip for peeling ginger (especially when fresh), just use a spoon edge and rub/scrape off the gingerskin ^_^

Absolutely! The plain ones without soap are basically made from woven nylon that has been texturized by partially melting during production. I haven't peeled a carrot in YEARS.

Hot pepper capsaicin dissolves in fats. So don’t make the mistake of trying to cool your mouth with fat free milk. Whole milk or cream is what you want. Or even better vegetable oil. If you cut up peppers without gloves and your hands feel like they are burning away. Soak them it vegetable oil to pull the capsaicin out of your skin.
I'm offended you would think I'd ever have fat free anything in my kitchen :P

You want your peppers to give you jar them in olive oil, dice up a bunch of your hot peppers then put them in pint jars and put olive oil on them and place the jars in boiling water for 20 minutes then remove and let cool.

Just don't use the hot peppers in oil to fry with you could land yourself in the hospital. My nephews buddy thought it would be ok to fry his eggs in them and couldn't breath he told me.

@@AnneofAllTrades I love your videos, they helped inspire me to learn more I took up woodcarving this year and I love it. Carved animals, a spoon, and done several relief carvings. I've always done woodworking since middle school and woodburning in high school. So it's fun learning new thungs.

If the hot sauce doesn't turn out delicious enough you could always switch it up to pepper spray. Judging by your reaction when you sniffed the pot it should be effective as a self-defense tool.
