sure you can change the size. baking temperature is the same, the time may be shorter. for the butter in the dough, you can easily replace with cooking oil. but the butter for the filling, maybe you need to change the amount of the oil, or the filling may be too liquid.

Yes, you use squash, or any pumpkin. Be sure to use a pan to fry the pumpkin puree if it is too thin. and also add extra sugar if your pumpkin is not sweet.

跟老師的食譜做了一次,效果相當滿意,但當然不及老師做出來的美觀細緻。麵包超軟熟,餡料比例很好。只是我做出的南瓜餡不夠幼滑,南瓜蓉仍然有粒粒。請問老師,我可否用機攪打餡料呢?
可以用机器或者过筛把南瓜泥做的更细滑。
蒸南瓜的时候 ,要把南瓜蒸软一点,做好的南瓜泥也会更细腻。
如果用压的方法,是趁南瓜刚蒸熟还是热的时候,来压会让南瓜泥更细腻。
非常美味又健康 就是我用手柔的面团 戴上手套🧤也沾不少南瓜泥 请教怎样才能不沾手呢?
面团粘手的原因大约是 1。面团太稀,或者是面粉吸水性不好,解决的方法是减少少许水量。
2。面团温度太热,要注意的是南瓜泥一定要用冷的,温度低一点。鸡蛋,牛奶这些湿性材料都要用冷的,称量牛奶时可以放一块冰一起称量。
3。面团进行水合,可以降温和产生面筋。
4。用后盐法和后油法。

Hi, if i dont have the machine, need to knead for how long?
may take 20-30 minutes to knead the dough. you can refrigerate 10 minutes in between. It is easy to handle if the dough is cool.

She used the Japanese squash called Kabocha. Maybe less water than American. I always cook it for my breakfast without peeling.
