If you like chitterlings you have to try West Indian or West African tripe. Just like chitterlings it's an acquired taste but it's cooked in stews or gravy and is definetly grown folk food. It's also rich in collagen so is really good for your skin and if you have bad joints.
I remember visiting this restaurant while in Winston-Salem abt 2 years ago. They actually had a line of several dishes you could choose from, various main entrées to sides and dessert. And I think the menu is alternated weekly. The owner was a lovely woman who gave me a tour of the restaurant. The food tasted like there where 5 grandmothers back in the kitchen pouring love into everything! Definitely try Taste of Triad.❤
