Redemption! I've been making fries in olive oil for a long time, and everybody thinks I'm weird for it. Now I can say that that's how they make them in Greece! They're so much better than with over-processed seed oils, the flavor is amazing.
The Portuguese and Spanish have been frying potatoes in olive oil ever since they brought the potato from the New World in the 1500s. Any culture with olive oil, when first introduced to the potato, would have done the same thing.
I love italian food but I have to say: the greek cusine is on par, if not even better. So rustic, very simple enjoyable food. I really liked this video!
@@claudia-romeo (Peloponnesian here) There's very good quality produce in Greece which makes for great food but I wouldn't call it Greek cuisine as such as I don't think we've got to that level. As far as I'm concerned there's only three 'cuisines' in Europe namely French, Spanish and Italian; the last one is my personal favourite😊
Greek cuisine is better just not s well know . How many know Naxos for example has its own local cows since antiquity and makes unique beef dishes and cow milk cheeses, amazing sausages, tradotional omelettes called sfougato or froutalia, cheesecake melopita etc

Bosnian cuisine is mix of Mediterrean, South Slavic, Ottoman, Balkan, and Central European dishes and it has very strong food culture. Some meals are sofisticated but most are simple, slow cooking meals with one requirememt - ingeridents must be of the best quality and the fresh as possible, no compromise with that. So properly prepared Bosnian meal even from the most remote village in the mountain can stand with any of those cuisines you mentioned... and Europe is large and diverse there are many other countries with unique dishes and quality food, those three you mentioned are very hyped becasue of tourism industry, they are indeed good too but to claim they are the only ones is ingorant.

However in some areas it has been taken to a higher level. one of the best memories i have as a kid i remember my grandfather lighting a fire inside an old barrel and then on an old iron pan making me fried potatotes in olive oil from our trees and then tossing in some fresh fish to fry , im 45 years old and still to this day i can still taste them, never even had something fried in other than olive oil till i was like 20 years old. i was so lucky to be raised in Messinia Greece
As a Greek I honestly thank you a lot for being here. We have so many great place to visit if you are looking for more. I grew up in the western side of Greece and we have beautiful places and really nice food and so many pitas(tiropita, hortopita, kotopita etc). North Greece has also nice places warm people and so much food choices and for the south region you have to visit Peloponnesus. So many great places there as well. I left out all the islands and Athens because everyone knows about them

Ιt's true that potatoes of Naxos along with potatoes from Nevrokopi are the two most famous and delicious potatoes of Greece. Greeks love chips. You should also try "Sifnian Revithada", it's usually made in Sifnos and other islands in clay pots and slow cooked for hours, basically a stew with chick peas.

Claudia, This was great! I used to love fries, but stopped ordering in restaurants because 99% of the time they used unhealthy seed oils, and some times didn't change for days or even weeks. These "better quality" potatoes, on open fire with olive oil (before reaching smoke point) is the way to go! Of course the fried cheese (saganaki) look amazing too! 💯
Briam is indeed a great dish. Executed with the right technique to keep the freshness and richness in flavour and texture, along with some sort of semi-fancy presentation I can see it served even in a fine dining restaurant, even though it's also humble. It was a great surprise for me, as a Greek, to see you visiting Greece. Of course, you wouldn't be found anywhere but the right places, showing some really special stuff, no surprise there. I can confirm that potatoes from Naxos island and from the regions of Neurokopi and Kalamata are the best potatoes in Greece and the best ones by far I have ever tried. Also, potatoes fried in olive oil *and note that this is surely extra virgin olive oil,* are also the best potatoes I have tried. What can I say... EDIT: Briam is also great (if not better) with spearmint instead of oregano.
I don't know about "traditional" when potatoes have only been in Greece for about 300 years and they have the history they have. They've been eating various types of fritters and pita for thousands of years, for instance. Regardless, everything looks incredibly delicious and another excellent video. Thanks, Ms. Romeo.

i descend from the Bisson familly, as in Hippolyte Magloire Bisson in Astypalea. i took me decades to figure out that grandmother bisson spaghetti sauce was Makaronia. another thing i could not figure out was her fries. i do now. this speaks to my genes. thank you.

Olive oil is not to be used for frying! It gets very very toxic and hard for the body to digest
