Matzah and Sourdough - siblings or twins?

The sourdough we love to bake has its origins in antiquity when flour and water sat and germinated natural yeast. But baking the flour and water in haste, as told in the Biblical story of the Exodus, yields quite a different result. And we will take a week off sourdough to observe that difference.
