  • Chicken Sorrentino
    Eight. Chicken cutlets, not too thin.
    Eight pieces of prosciutto
    Eight pieces of eggplant, roasted or fried
    Mozzarella to top each piece
    One jar of marinara sauce
    One cup of white wine
    One onion
    Olive oil
    2 tablespoons of butter
    Salt and pepper to taste
    2 cups of flour
    Put salt and pepper and your flour mixture
    Dredge, chicken cutlets
    Heat your pan add your oil and butter
    Sauté the chicken cutlets in batches and keep on the side
    Add onion to the same pot, leaving the oil and butter in
    Add salt and pepper to taste
    Let cook until translucent
    Add the wine and let the alcohol cook off
    Add the sauce and cook for about 10 minutes
    Shut the gas off add your chicken and single layers your prosciutto. Next add the eggplant right on top and then the mozzarella on top of that put a little more sauce on top
    Bake in the oven 400° for 25 minutes
    Enjoy !

    Wait, what, you can freeze fried eggplant?!?!?❤OMG thank you for sharing this is amazing tip will so try this out in the future. Love the Chicken Sorrentino recipe and will definitely give this a try - it's great as it's easy enough to adjust the ingredients to a small or a large group. Leftovers must be amazing. Food for thought - how about a video on all the ways you use your frozen fried eggplant - my mouth can't stop watering 😋🤣

    I prefer baby eggplant. Also less seeds.
    But I’d rather fry chicken cutlets for some reason like you.
