I love watching You make sofrito! Sofrito is our secret ingredient. Puerto Rican's are taught by our mothers, grandmothers, and great grandmother how to make this. Unfortunately I have seen videos of people that are not Puerto Rican making it and calling it there countries original recipe and not giving us Puerto Rican's credit.
Lol you think we’re the only ones who use a herb and veggie cooking base? Almost every Caribbean country has their own variations of sofrito based on the ingredients they have. Look up “Haitian Epis” or “green seasoning”. Jamaicans, Trinis, and Bajans all have their own version. Sofrito itself comes from an Italian term “soffrito” containing onions, peppers, celery and parsley.
@@NJLev when people( and i mean someone from another country) put the exact same ingredients like we do in our sofrito and call it sazon to make it look like it started in there country then I have an issue with it. When people make arroz con gandules put our Puerto Rican sofrito and by that I mean our exact ingredients into it to make it look like it's from there country I have an issue with it. Many carribean islands have there different variations I understand that! But no two islands have the same ingredients!!!! And there are certain you tubers out there making our sofrito with our same ingredients and calling it sazon!!! Shame on them!!! They should be embarrassed!!! And yes I will call them out on it!!!!

I am a chef and I can never be without sofrito. Homemade is the best, and although culantro is not a must for preparing sofrito, it definitely makes it taste better if you have it available. Culantro is a great herb!
wrong..culantro IS what makes it sofrito ....it grows wildly in Puerto Rico and thats whhat gives tge unique flavor...i wouldve never eat at a restaurant of a "chef" that makes "sofrito" without recau

Thank you for this recipe! This is almost the same recipe my grandmother used, she just added pimento stuffed olives and capers. I loooooooooove the smell of fresh sofrito!
Love your videos! Nothing like homemade sofrito. My husband and I are big into gardening and last year we grew all the ingredients for sofrito in our garden ( including the hard to get culantro). Wow oh wow!! Nothing like garden fresh. I freeze it in quart size freezer bags and break off the amount needed.

Bea Romero You can double up the cilantro and heat about 1 cup of oil in the calderos at medium high heat for a few minutes, then let it cool in the pot.

Why no one is saying this... But you need to open a window to make this!onions and fitweed (culantro, recao) are overwhelming in smell! Thats why most ppl dont make this from scratch... I nearly passed out mama lmao fitweed is sooo strong sent... Also i like oregano in mine. I think it was an italian/puerto rican merger back in the day maybe?

I just learned that you can sauté it with olive oil before putting it in the food processor! I store mine in jars in the freezer and take one jar out at a time to keep in the refrigerator and use as needed.
Good video. I do the same except I add a small amount of extra virgin olive oil to mine. I freeze mind in trays also because I do not cook that often. My mom used to keep hers in the fridge because she cooked a lot every day.
I was researching Culantro. It is also known as Chinese Parsley. That might be what Asian markets have it labeled as. Knowing that might make it easier to find.
You use white onions not yellow does it matter? I also add a 2 tomatoes I add some oil. I was told it all depends on what part of Puerto Rico your from is how the sofrito is made .lol and were from the Bronx New York thank you as always your the greatest
The cubanelle peppers makes such a big difference. Sometimes I can't find the recao or the ajices, but you have to have the cubanelles peppers in there.

I just watched a bunch of your recipes and I cannot wait to try them and hopefully impress my PR BF. I'm confused tho bc for now I'm going to be using store bought Goya sofrito or recaito. (I've never cooked Latin b4.) You make your own sofrito then generally are sautéing it in your recipes. Does that mean I should buy the frozen recaito to use in your recipes when you call for sofrito??? Please help. And I thought the Goya sofrito is tomato based?? Your sofrito has no tomato.
