Ingredients: *note at the bottom
2 Green Bell Peppers
1 Red Bell Pepper
2 Green Cubanelo Peppers (Italian Peppers)
1 Large Red Onion
1 Large Yellow Onion
1 Bunch of Cilantro
1 Bunch of Recao (Culantro/Wide Leaf Cilantro)
3 Cups of Garlic Cloves
3 Ribs of Celery
Half Jar of Pitted Olives with Pimento Peppers
Half Cup of Ground Oregano
Half Cup of White Vinegar
1/3 Cup of Black Pepper
Half Cup of Soy Sauce
*My original sofrito recipe contains more bell peppers and makes a larger batch of sofrito. This specific batch of sofrito is what I call my 'summer batch' - since I cook less in the summertime, I make a smaller batch. I also don't add any salt to my sofrito, that is a personal preference because I like to monitor/add salt content while I am cooking. My original sofrito recipe is posted on my UA-cam channel first video ever uploaded.

I made a huge batch of this today in preparation for making your Thanksgiving pernil style turkey. I could not find cilantro ancho here in Kansas. We have a limited selection of foods here. It still worked out perfect!

You can double the cilantro if you cannot find the culantro. Check Asian markets in your area. They use culantro too!
Hi I'm sorry I couldn't help but noticed that the cilantro looks like Italian parsley. I saw culantro (what you call cilantro anchor/recao) but the the other greens looks like parsley?? Is that what that is?

Hello cousin! I defrost the left over sofrito on the counter, it takes about 4 hours and then I refrigerate it to continue using it! I use it to season once it’s been defrosted 😊

Sorry for the dumb question but i am learning how to cook. Would you add anything else when seasoning? Like salt, or Adobo? Or is the sofrito an all inclusive recipe?
I use adobo and the sofrito when I cook everything. Or salt instead if you like.
Hey cousin, this question is not dumb! Sofrito is the base for cooking. Depending on what I am making, I tend to add onion/garlic powder,, sazon packets for color or chicken bouillon. Check out my channel for a multitude of recipes!

I am going to try it just the way that she did it just now I'm going to clean off my vegetables wash my vegetables I love using red pepper green peppers yellow peppers almonds peppers I love using that if I just do it exactly how she did it I won't have no problem. And if I don't have me a food processor it's okay if I could afford to get a ninja blender. Then I'm going to give me a Ninja blender to make my own sofalito all I have to do is just look at this video look at the ingredients that she has it just do it exactly just like this and that's it it don't look that hard.I'm to see if it comes out like that and if I don't get me a Ninja blender. I know I could find me a real good blender it could be for $100 I probably don't have to put an extra $95 on it will work. Going back to look at the video again.

This Sofrito is great but came out wayyyy too spicy. I would recommend only using 1Cubanelo or none at all
LOL Cubanelle is NOT spicy at allllllllll......its not a hot pepper.
