    Anybody affected by Irma, My thoughts are with you. Brook and I, are fine, but many of our Fellow Floridians have suffered a lot of damage. Keep the Florida Keys in your thoughts, as it was heavily destructed. Also stay tuned, as I will be running some sort of campaign for an Irma Relief effort.

    This is real life, this is what happens when you actually go and hunt down and catch your dinner. There is blood, there is guts...my fish doesn't come wrapped in plastic, where the dirty work is done for me. Shame on UA-cam for bowing down to a overly sensitive and soft society....keep it up and keep showing the real life aspect of being a fisherman. Tight Lines!

    Of all the fishing vids I’ve watched, YOU my friend are the only one I’ve seen that cuts the gills!!! Finally someone gets it!!! You gotta bleed them out for a better tasting fish. Plus, it’s just gross not too. Thank you for your proper fishing skills. I’m female, fished with my dad all my life, and thank God above he took the time to teach me the importance of the small things that mean so much. Happy catching!! 🐠

    Catch and cook is the only way to go. Catch and release is a waste of time. Unless it's too small, I eat all my fish. Fish is delicious!!

      If I'm paying $50 for bait and I catch, I'm eating it. Catch and release is for people fishing lures and cheap baits.
      Sorry just the way I feel about it. I wouldn't be spending that kind of money or more to be throwing shit back.

    To keep it from getting dried out when Blackening with cast iron rub the fish against the grain with softened butter and then apply the spices. I love Blackened Redfish and just about any fish with Blackening spice, but it can be tricky to pull off. I also use my grill for heat as the smoke involved will fill the house. Killer video and keep em coming.

    when blackining start with a lower temp pan and build it slow after a few mins of searing flip and put in the oven for 7 or 8 mins

    Nevere ate Permit, but as a kid, we caught Pompano on the coast of Carolina and ate them. Good tasting fish. One of my favorites we caught there in fact.

    Should of eaten them medium rare. I was thinking when I saw how caramelized the fillets were you may have cooked them a little too long. With that firm texture they would have been perfect for slicing thinly and then dragging them thru some pick-a-peppa spicy mango sauce. do them again in the future and watch the cooking time a little closer. I have no problem at all with you keeping a permit.

    Viktor, don't apologize again if you are eating a fish. That is the reason you fish, to eat and enjoy with your people.
    You honored a fish when you cook it yourself (that's another pro). You spend money in fuel, lodging, bait end etc. giving a benefit to the local economy (another pro) instead of buying fish and chips around.

      Riley Pilot better catching snook in pompano. I remember going to the pier before and catching flounder every cast. I used to fish right off of the beach early early morning or near dusk. Worked great even had success with fly rod too.

    Spraying your fillets down with a fine mist will not affect them the same as soaking in hard tap water. For that matter, neither would soaking in distilled or RO water since it contains no calcium or magnesium to affect osmotic balance

    Would it work well to suspend the fish up by the head and then cut off the tail in addition to cutting the gills to kill and bleed out the fish?

    I grew up and lived in Cutler Ridge now known as Cutler Bay. I'm there often I still fish the Keys often. A good friend is a guide at World Wide. We never keep permit it's kinda distasteful kinda like Tarpon in my opinion. Sure you can eat them but they don't taste so good. Catch yourself a nice blue line tilefish. Now they are top shelf eats there.

      Permit tastes fine. It's the firm texture that's wrong with it. It's a muscley fish and not a lot of fat or oil.

    Thank you for that video, I'm thinking that fillet table may not be as good as you think? The fish slides all over it while trying to cut and that not only makes it's really difficult but you could very possibly slip and cut yourself really easily and badly while doing it.

    Creval Jack are really great fish to catch & cook. Almost taste like Amber Jack. They are prized here in TEXAS. I like them Tony Chacheres fish Fry cubed into 1" deep fried. And I like your Grandma, rarely eat any fish I catch. I usually give them away or catch & release Great video BTW..

    The Baha peninsula is a popular spot for Wahoo and Rooster. Both have very firm steak like flesh and both are better than tuna in my opinion. Very filling. I take leftovers and shred it up and make fish salad, just like you would with Tuna. Great for sandwiches, great on the grill, great for baking, heck I bet you could even braise it, you just can't go wrong with those fish!

    These fish is abundant in Southeast Asia. They call it Golden Pompfret. Good stuffs when steam, bake or even fried. Not so much flakes and taste sweet

    Outstanding Channel, great job of filleting, I liked how you gill the fish, personally I also gut it before it hits the cooler. If you can leave it in a live well just gilled, it bleeds out even better.

    If you really want a Cajun style blackened fish, here's the recipe
    1 1/2 tbs lemon pepper
    1tbs garlic powder
    1tbs salt
    1tbs black pepper
    1/2 tbs cayane pepper
    Mix seasoning on a plate, melt 2tbs butter in a pan, turn off and let cool some
    Dip filets in butter and coat thoroughly in mixed seasoning, pan sear on high, 2 mins each side, pre-heat oven to 350, place pan seared filets in baking dish, coat thoroughly in italian dressing, bake 20-30 mins or until flakey, adjust cayane pepper as need as it is CAJUN style

    Try frying in coconut oil instead. It wont dry out your fish and it is healthier as well as better tasting.

      The saltwater preserves the fillets much better. I don't know the exact science behind it, but I have noticed in difference as to the quality of fillets.

    I can understand it both ways. permit especially smaller ones are one of the best eating fish not only in Florida but arguably the world and even though I've been fishing since I was 4 years old I'm in my thirties now I ate so much fish when I was younger that I don't keep anything anymore barely. the only things I'll keep is a grouper to during season a snook during season and that's about it I release all permit. now when it comes to Crustaceans especially Lobster then I'll get my limit a few times during the season but that's about it

      You could just get a 40 lbs leader as well as 40 or 50lbs main line and get a 5 circle hook and just put a whole squid or a piece of dead fish and just toss it out into the surf or where ever it is that you are fishing.

    Possible to fry the skin? I did that with lots of free salmon skin. Lightly sprinkled with smoked sea salt it chili lime sea salt. Heck even Johnny's taste great.
    I fry up turkey and chicken skin, then salted lightly. When I got back to the kitchen bless their hearts friends usually leave me just one. No more ewwws or wasted chicken-rones.
