I've finished a few projects with spray-on products and haven't had any problem with them. Nowadays I've been trying Rubio Monocoat and that works pretty well. I'd recommend going with whatever you're comfortable using.

What is the stock thickness?
Probably 3/4 inch, but just about any thickness will work. However, the thinner the stock the shallower the bowl will be, and vice versa.
Where get pattern
The bowl was inspired by 'Wooden Bowls from the Scroll Saw' by Carole Rothman. I adapted on of the plans I found in that book.
He said this is going be 7 and 3 inches long why not just say 9"
It's about 7 and 3/8 inches long and 3 inches high. That's what I get for working without a script.
