Down here in the mid south of the USA, I bought a ranch to retire on. Wasn't 24 hours after I moved in that an old grizzled guy, appeared from out of my southern woods with both hands up and waving (they still shoot uninvited trespassers down here on occasion). I Motioned him up to my back patio/sundeck where I was sitting admiring the view and we had a bit of a conversation. His First question was "Hello, do you hunt?" Turns out he owned the place just to the south of my property line. When I replied not so much anymore, but on occasion, he explained that his dogs would sometimes chase deer up over the ridge bout 20 yards from my deck and if that was ok. I said sure. Some days later on a different occasion, "Whitey" asked about if I knew why my Ranch had the name it did. To my surprise, he asked me to follow him into the woods which I did and after a short hike of about 70 to 80 yards , we appeared at a hidden glen with a spring flowing out of a wall of rocks, and into a small pool or incredibly (for this area) clear water.
He then explained that back in "his" day, my ranch was locally famous for being the home of some of the finest moonshine in the state, all made from the water from that spring. When I asked who had run the stills, he winked and replied that HE and his father had :) LOL. Whitey at that point was in his 90's and later, before he passed, he delivered his families formula to me, along with a jug of some that he had secreted away years before, when he could no longer safely drink the stuff. To be frank, Whitey would've laughed his ass off at 30 percent shine. I don't know exactly what the Percentage of the stuff he gave me was, but it was so clear that it made a full glass look empty. The taste was unlike anything I'd ever had before (and THAT is saying something;) it wasn't offensive, but it also wasn't what I would describe as "tasty" It didn't burn my mouth or throat, but moments later I began to feel a warmth quickly spreading throughout my core resulting in a deeply satisfying 'mellow' relaxation within a few minutes followed by a marked decrease in my hand/eye communication and speaking speed LOL. Powerful Stuff! TOO powerful to make a habit of imbibing straight up, but possibly an excellent 'mixer' component. Tell you one thing, though; if someone ever managed to spike the the punch at the local High School's Prom- 9 months or so later we'd have had a population explosion in the valley LOL. As my old grandfather used to say:
"that stuff will make you run through the bushes and bark like a fox!"
    heh

Here's a little description how moonshine is rated
In the old days, before the invention of more modern distilling techniques like thump kegs and reflux stills, moonshiners used a basic pot still - the simplest of all types of stills. It’s made up of two components: a boiler to cook the mash and a condenser to collect and cool the alcohol vapor back to a liquid.
While it is an effective device, you don’t get pure alcohol when you run a batch through the first time. The fermented mash, which is very similar to beer, starts out at about 5-10% alcohol by volume (ABV). When you run the mash through a pot still, the product coming out of the other end contains about 30-40% alcohol, the rest being mostly water. This is called “singlings.” (While the first run produces liquor at about 60-80 proof and is drinkable, you wouldn’t want to drink it since it still has quite a bit of off flavors carried over through the water from the mash. To raise the alcohol content, you must save up all the results of your first runs, and then run all of that through the still a second time. The second run raises it up to the 60-70% ABV range. Moonshine that had been run through the still three times was very close to being pure alcohol, above 80% ABV.
The “XXX” signifies how many times the moonshine batch had been run through the still. Three X’s indicated that it had been run through three times and that the shine was pure alcohol.

    1. My friends came by the garage during production and termed me as “Really f***in’ strange.”
    2. I got 4 pints of about 60 proof.
    3. When my parents got home and wondered what the rotten corn smell was in the backyard, my dad said “YOUR SON was running shine.” Only time one of them verbally disowned me.

Having worked as a distiller for a company in Appalachia that I wont ID, very little of what we marketed as moonshine was a traditional corn liquor. Most of it, especially the flavored stuff, was grain neutral spirit (190 proof) mixed with copious quantities of water, sugar and flavorings along with coloring additives. Some of it was corn "beer" that was distilled and watered down to a pre-determined ABV in a more traditional method, but mostly, it's commercial-grade everclear with water and/or sugar added. We were not alone in this, either. Most of our competitors did similar products.

I love the history behind moonshine!
I'm from California but have been living at the foothills of the appalacian mountains since 2006, right after I graduated high school. Moonshine here isn't a normal alcohol to drink, but it is a huge part of the history. Every year a town near me, Dawsonville, GA, holds the Moonshine and Car show. I went last year and it was so much fun: We got to see a lot of beautiful vintage cards and some new ones. They had tents set up selling vintage car parts, records, license plates, etc. The moonshine was so amazing too, supplied by Granddaddy Mimms.
My charge nurse when I was just starting off in the medical field was the granddaughter of an old shiner. She said she loved seeing him fix up his cars and hear his stories of out running the police during prohibition. It's great, even though I don't like NASCAR, to have visited the NASCAR museum and talking with my old boss. I love learning the history.
That being said, I LOVE Smoky Mountain Moonshine! We have a lovely package store that sells these as their main display. They sell shot sized mason jars full of shine, and they're the cutest little things. I reuse the little mason jars to store spices when it's harvest season. :)

I can tell you that unfiltered, pot still moonshine and mushroom honey has a really unique synergy of flavor that constantly intrigues. Packing fresh mushrooms in warm honey is a way to preserve them, and the liquid that is left after using up the mushrooms is what's called mushroom honey. Very common with old hippy types that picked magic mushrooms, but it keeps any mushrooms for months. And mixed with high proof, uncut moonshine it tastes addictively curious, nobody can ever guess the flavor, plus it keeps shifting on the palate.

I made moonshine in the mid 90's in rural Midwest USA. In 5 yrs of making shine I only flavored one batch and used peaches. My orchard had an abundance of peaches, and I used 1/2 bushel in my fermented mash. That was a lot of extra work. I much preferred the taste of the unflavored shine. The ingredient labels are telling for ingredients. I used water, corn, wheat, and yeast to make my mash. The best shine is not sold in stores...

There are many types of moonshine. There is corn mash, sour mash, wheat mash, stump shine, Brandi shine, potato shine.
Most American shine is 180-200 proof naturally before proofing barrel, it’s clear because brownish color comes from wood in aging barrels. Most American shines are a corn grain whiskey but don’t have to be. Quality of any shine is defined by its proof, mash and water source just like Whisky.
I’ve made various shine whiskeys, vodkas and Brandi’s. My preferred shine is distilled honey mead.

The ingredient list says the moonshine is made from fermented white sugar water.....real, authentic moonshine should be made of a corn based mash and then fermented. The sugar wash stuff is ok but it is just kind of pure alcohol without the nuances and character that corn or grain provides. The real moonshine I can get here in western NC sometimes has a drop or two of corn oil that separates out of the shine after a few weeks or so. I just spoon it off and throw it away.
