Hi there, this is a nice video! Thanks for demonstrating a non-dairy whipping cream - I haven't had the opportunity to work with that before. I wanted to share that I have good success using confectioner's sugar to sweeten whipping cream, instead of caster sugar. It seems to dissolve faster and mix into the cream more thoroughly. Also, in terms of sugar alternatives, I find Splenda to be my favorite because it has less discernible aftertaste.
And using caster sugar might give it a weird texture
