I saw a video years ago over on @Roots and Refuge Farm where Jess made some sweet potato hash for her family - for breakfast. And more recently another take on it by Becky over @Acre Homestead . I wanted to give it a try tonight, as a quick and easy dinner meal. I started by browning up 1/2 of a pound of sausage, cooked up some onions, seasoned and tossed in some sweet potato chunks. It then went off into the oven to bake until it was just about done. I removed from the oven and added four eggs to a little well, and tossed it back into the oven. I just made Becky's granola for the second time! And I make her blueberry scones alllll the time. And last night, I tried one of her tricks to thicken my short ribs. Worked perfect! She's an inspiration and I've been doing this my whole 49 years! HAHA.
Thanks! I'm in a huge sweet potato phase since your last video about them. They truly are the perfect small easy filling meal--especially great when hubby/family isn't home. Can't wait to try this!
Haha. I made that for breakfast yesterday, I just used potatoes, onions, garlic, sausage and some chopped bell peppers from the freezer. Just cooked it on the stove covered, then let it get some color and added cheese, fried eggs for us and scrambled for my kids. So good.
Just had to say we had this tonight for supper--I added a couple of things just because it was stuff we liked--and it was a hit. It is a new family favorite. Thanks for sharing.

I watch both of those channels too! I felt kinda proud a few days ago when I found a Pyrex baking dish for 3.00 at the second hand store. I took it home, washed it up and made extra at dinner so I could freeze a heat and serve meal to use when I have surgery later this month. Today is also happens to be taste day for my apple cider vinegar for which I got the recipe/method from you, and from Jess I learned that seeds want to grow so now i plant many, many seeds! I make this kind of hash [inspired by Snooze restaurant in CO], but I also add in chopped kale at about the same time as the sweet potatoes. I never thought about using the oven, great idea! I've always just scooted the hash off to the side and fried a couple of over-easy eggs to plop on top of the hash when it's plated up.

One of our favorite dishes...breakfast or dinner. When I make it for dinner, I add carrots, red peppers, apples and cranberries. So good!!
