  • Chanakhi is a traditional dish of Georgian cuisine. As a rule it is cooked in clay pots and thanks to slow stewing in a furnace or an oven we get unique meal with tender meat, juicy vegetables and flavored broth. Chanakhi is sure to be very much to the taste of demanding gourmet, our video recipe will help you to cook it. And another thing - do not forget about a glass of dry red wine, it will be very welcome, so Georgian way.

    Ingredients:
    • lamb - 700 g
    • broadtail fat - 100 g
    • eggplant - 430 g
    • sweet pepper - 340 g
    • large tomato - 500 g
    • small tomato - 250 g
    • bulb onion - 400 g
    • potato - 500 g
    • garlic - 10 g
    • hot pepper - 1
    • vegetable oil - 150 ml
    • salt - to taste
    • ground black pepper - to taste
    • cilantro - 20 g
    • parsley - 20 g
    • spring onion - 20 g
    Preparation:
    1. Chop up the broadtail fat, cut the meat into medium pieces, dice the onion, cut the small tomatoes into 6 parts and potatoes into not large pieces, dice the greens finely.
    2. Heat a pan and lay the fat, melt it for 7-8 minutes over low heat, take the cracklings out of the pan.
    3. Lay the meat into the fat and fry for 5 minutes over medium heat, add the onion and fry for another 10 minutes. Remove the fried meat with onion from the pan.
    4. Cut the eggplants into average pieces and lay on the pan with that broth in which the meat and onion fried. Add 1 tsp of salt and fry the eggplants for 5-7 minutes until light golden brown.
    5. Dressing: chop the large tomatoes, garlic, 100 g of sweet pepper and 1 hot pepper in a blender until smooth.
    6. In baking pots of 600 ml volume pour 2 tbsp of dressing, lay 2 tsp of parsley/cilantro/spring onion. Make then a potato layer, a meat and onion layer, follow with a layer of small tomatoes, some salt and ground black pepper to taste, then a layer of sweet pepper and eggplants and 2-3 tbsp of dressing on top. Note that proportions of meat and vegetables have to be equal in a pot - 50% / 50%.
    7. Put the pots into a cold oven, then heat the oven to 180°C and bake for 80 minutes. Chanakhi is ready. Enjoy!
