I don't think I have ever messed with the Easy mode on this (I guess since the base game is already "easy mode" for me at this point, haha). I didn't realize there were so many differences. No knockback and carrying over your sub-weapon on death is crazy! Also, when I was a kid, the box art of Castlevania freaked me out. Dracula's face on it still looks vicious today.
