Today we prepare an ancient Roman sausage made with meat and spelt.
A great example of an ancient food suitable for both a rich convivium and a meal consumed quickly in an ancient Roman tavern.
Ingredients

They say you're better off not knowing how sausages is made because of the casing. It's the intestines of an animal. Though really nothing can go wrong as the poop is removed and usually you cook it or smoke it.

For anybody wondering about how to get the the casing, ask your local butcher for a casing. Usually they have cow casing there. Otherwise i believe you can buy online. It's better to ask butcher, as they can cut the length you need. If you buy it online you'll get a surplus and it's really only useful when you're mass producing them to buy online.

I think it's interesting that Garum has all but disappeared from Italian cuisine. If it was so popular why didn't it survive?

A great part of the classical culture disappeared after the fall of the Western Roman Empire, included some foods and alimentary habits. The main reason is the cultural change due to the barbaric invasions. Garum survived for a long time. During the Gothic Kingdom of Italy, it was still common: it is present in the most part of Vinidarius' recipes. It is mentioned in an edict by Charlemagne, and we know from the sources that it was still used in the Byzantine Empire at least at the end of the 10th century. In Italy, there is a traditional fish sauce, called colatura di alici, which is identical to ancient muria, a by-product of preservation in salt of fish.
