      I just made this for my mom for mother's day. Not only is this recipe extremely easy, there was no leftovers between my mom, my dad and myself. I did have to substitute the Radicchio for endive due to there not being any here where I live in Florida. Thank you Vicenzo for helping to make a great Mother's day for my mom.

    I just bought the most amazing radicchio, because I never tried it before. It's because I saw Vincenzo talking about how delicious it is.     this is great spring/summer dish. leafy veg go first in garden and you can hove nice bite. amazing risotto

      @@CarnisianLady was not sure about summer so i write it that way. but that means that it is good on spring like i found it now there is season mostly common in winter to early spring which is what i expected. our grandmothers in my country eat "saladish" dishes in early spring hence leafy veg went earlier then other. so they cooked things after winter stock and fresh produce. as tradition where refrigeration was not common. it was just my assumption that it will go till summer. this risotto remind me such dishes where rice you have is in your stock, cheese can be there too hence it is matured cheese, you need just oil, butter and some little spices. italy is also full of villages. but good to know that they grow radicchio in winter till spring. i like seasonal produce. and i like old fashioned things about italy, greece and spain. those are my favorite cuisines and sort of 50s -60s maybe 70s time for life stile. i use a lot of generalization and idealization now :P you know like movies of giuseppe tornatore

      @@vincenzosplate the Gorgonzola was too strong, nevertheless we enjoyed it. We used Parmigiano Reggiano instead of Pecorino and the vegetable broth was from onion, celery and carrots only.

    For my personal taste I use taleggio instead of gorgonzola to and grana instead of pecorino. I do not add onions and put much less butter.

    I actually find that sushi rice makes a great risotto. It’s got a shorter grain than Arborio rice and is even starchier and creamier.

      I agree. I tried arborio and sushi rice. Sushi rice wins in the starch release. Much so you don’t need to add butter and cheese too much.

      @@eshton1234 I saw Ming Tsai do it on his show once. That’s what made me wanna try it. Came out great. I might still add the cheese for flavor but…yeah you can go a little easier on the butter.

      No! Radicchio is a red salad, tipical of north-eastern Italy. The one Vincenzo is using is the "radicchio di Chioggia". There are other varieties, radicchio trevisano and the highest quality, radicchio tardivo.
