  • Pat Durkin shows Janis around Green Bay, Wisconsin and explain to him how the Fox River and the Green Bay of Lake Michigan are success stories for the conservation ethic of the late 20th century. They do a little ice fishing right in downtown Green Bay and take a ride on a questionable homemade airboat, before heading north to Sturgeon Bay where they meet up with local guide JJ Malvitz. The episode caps off in JJ’s shop with a big fish fry and a lesson on how to make the perfect Old Fashioned.

    I have always thought ice fishing was ridiculous until this series, now I can't wait to get up North and give it a try. Thanks for bringing us this series in such a light hearted way that explores the community as much as the process. Great people, great fishing, great fun.

    Its funny I have heard pike is a trash fish from so many people, I have been eating pike since i was a young kid and its one of the best tasting fish i have came across. Blackened Pike is my go to recipe. I have fed it to many people and they all have loved it. Other then a few bones here and there i cant find a bad thing to say about them.

      I have found that in the wild game world there are so many nay sayers that say everything tastes bad other than venison backstrap and walleye. You can make almost anything taste good if you do it right

      People say the same here in wa about white fish if you can believe it. Everyone wants Salmon and write off anything else. I'm a salmon fisherman and would take walleye or white fish over salmon any day. We ate pike growing up and it's delicious

      I’ve never understood it. They’re phenomenal. Maybe it’s because they’re super slimy or because of the y-bones that people assume they’re not worth it, but when you know how to handle the bones, it’s not a big deal. More for us, I guess.

    I have ridden bicycles twice in Door county Wisconsin and had a fish boil of white fish. Amazing! Who would think boiled fish would be good but it is a regional surprise.

      It gets over 36” thick in Wisconsin on most lakes. You need an extension for the ice auger

      5"? A couple years ago, we had dang near 5 FEET of ice on some of the inland lakes. Many lakes in Northern WI have average days of ice cover in the 150+ days category.

    Growing up Whitefish were always on the menu..year round, but especially during the spawn in the river......to break the slime and make them easy'er to handle...gut then soak in a salt bath...works on most fish I have tried.

    From st Joseph Michigan to sturgeon bay WI my second home. Worked at bay ship build co. Super sections and in the million dollar hole. Last vesicles worked on where for sea Land Co. The Kodiak, Tacoma, Anchorage. President Regan visited the shipyard just before I hired on.

    I'd LOVE to have one of those fillet machines, though here in Michigan, skinning is almost a requirement due to the pollutants. =( Been many years since there's been any number of whitefish though... our DNR sold us out to the commercial fishermen.
    Key to filleting whitefish by hand is to cut from the inside of the fish out so you don't have to cut through the scales.
