THE BEST CHICKEN BIRYANI | THE GOLDEN BALANCE

  • Start off with a generous amount of ghee:
    Add:
    4 Star anise
    1 Bay Leaf
    6 Cardamom pods
    1 Cinnamon stick
    5 Cloves
    Toast the spices for 1-2 minutes,
    Add 1 large red onion 1 shallot and green Chili’s, or jalapeños (The shallot is my preference) and cook down until translucent
    Add 2 large tomatoes and cook for 5-10 minutes on a medium heat
    When simmered down, add yogurt or Labneh (keifer cheese), to make it creamy and thick
    Add salt , red chili powder, Garam Masala (optional fenugreek leaves)
    Add your Butchered Chicken and submerge.
    Bring to a light bubble, cover and cook for 30 minutes.
    In a separate pot bring water to a boil, add cardamom, cinnamon, bay leaf, cloves, fresh mint and cilantro
    Add soaked washed basmati rice and cook 3/4 of the way
    Drain 75% cooked rice and transfer to the chicken mixture and cook for another 10-15 minutes until rice is tender.
    Do not over cook the rice or it will turn mushy.
    Mix well and finish with fried onions mint and cilantro
    Ingredients:
    5-6 Star anise
    1 butchered chicken
    1 Shallot
    Large red onion
    bundle Fresh mint
    bundle Cilantro
    2 medium tomatoes
    1 hunk ginger
    2 cups Basmati rice
    2 tsp Garam masala
    1 cup Yogurt, keifer cheese, or Kurd
    10 Cloves (half for curry half for rice)
    8 cloves Garlic
    Salt to taste
    2 Bay Leaf
    2 Cinnamon stick
    8-10 Cardamom pods
    5 Green chili’s
    1 tbsp Red chili powder
    2 tsp paprika

    Salaam brother. Greetings from India, I cook the exact same way with little variations, give it a try and you’ll definitely notice a big difference.
    1) have more color on the onion before you add the tomatoes, needs a little more light brown color.
    2) Soak the Basmati Biryani rice (yes you know there are variants of basmati) typically for 2-8 hours so that the rice grains are long after cooking, less soaking means less length
    3) Along with saffron water, add ‘kewra’ water or essence, you can get that at any Indian supermarket, will make the people even from ten blocks away raid your house for Biryani, if they haven’t already that is.
    4) In the spice mix, add a black cardamom too and a little bit of cumin powder, (usually garam masala has it but that is in small quantity)
    Rest, you are doing an amazing job. Respect!

      Now brother 15 years ago I could not understand this I was thinking how could this be possible . but recently daily mail (and other newspapers) published that earth is spinning faster and also scientist are planning to reduce a minute to 59 seconds .
      And 2021 will be shorter than 2020
      There are many signs read that and you will be surprised how prophet Muhammad could know this .

    Definitely prep first, then do all the cooking (condensed) for us. I think a solid 5-10 mins will be just enough. It’s so beautiful seeing it all come to life. Just chat with us with facts and humor in between cooking. Great work!

    As far as your inquiry, I feel like it’s okay to go a little longer with prep work being this is UA-cam whereas when I want the short video I usually see those following you on Instagram. So I vote for prep additions versus just already in a bowl and adding together only. That’s me :)

      Basic spices is all tht is needed.
      Cloves
      Cinnamon/ Dalchini
      Cardamom
      Shahzeera
      Bay leaf/ tej patta
      Lemon juice
      Curd/ yoghurt
      Fried onion/ brista ; the most imp thing
      Green chillies
      Cilantro/ Dhania/ Kotmir
      Mint/ Pudina
      Salt
      Tumeric
      Red.chilli powder
      Ghee/ clarified butter

    As a Pakistani person, this is so great and on the spot!!!! It looks sooo delicious MashAllah!!! I would also recommend what I think others have mentioned about adding some kewra water (my mom makes it that way too) and also try adding some dried plum sometime. It tastes so freaking good, it's like finding a piece of gold in a minefield- against all the spices that sweetness is just really yummy. It's honestly one of my favourite parts of chicken biryani!
