Hey Sam no need to fill hopper first, just remove that extra metal piece that’s built for webers Genesis grill. I double checked mine and the hopper lid clears with that piece removed. I like the rotisserie as well and think it does a good job glade it’s working good for you.

looks great! I just received my rotisserie for my 600 and can't wait to use it. What you need for gloves is those cheap white cotton ones along with the latex x-large black gloves to put over them. This combination works great to handle hot stuff. The latex gloves are also good for handling the raw meats and putting rub on them, etc.
Great video. That Searwood really does a fantastic job. Wet Brine or Dry brine has been my go to for poultry. I am still waiting for the 600XL to come back in stock. Can’t wait!

Yes, rotisserie chicken is super easy, but also lighter in flavor than other ways of preparing chicken. I find that putting some seasoned butter under the skin helps, and I also season the chicken way more generously with rub (I love Clucker Dust by SuckleBusters). That helps a little more flavor, but rotisserie chicken is just going to be less flavorful than other ways to cook chicken. It’s like a roast chicken, I have to use the seasoned butter and a generous coating of seasoning to give it strong flavor. Great video!
Joey, thanks for checking in and for the advice. I make most of my own rubs, with the exception of Fire&Smoke society stuff because my wife doesn’t do spicy. I LOVE the heat, till your forehead sweats. Does that Dust bring the heat?
Interesting how they made the spit so long that it would adversely affect the hopper lid 🤔...I wonder if you can trim off a small section on the right end and still have the balance you need but be able to open thr hopper some...I also noticed you have th 50/50 wood/charcoal pellet mix going...did that work well on this particular cook? Excellent video, history lesson and outcome! 👏👏👏
Mr. Small, in looking at it, you could remove the handle on the hopper side. Does it function as a counter weight? Not sure. I just need to remind myself to fill the hopper first. ✅
Holy moly this grill is so much better than my smoker. I am jealous. I personally Always had best experience dry brining chicken over night with just kosher salt. Then prior to smoking hit it with ur Bbq rub👍. Juicer and skin crisp up beautifully
I have this same setup and have been wondering lately… what’s the benefit of a rotisserie when you don’t have a direct heat source? I want do a comparison of two chickens. One on the rotisserie and one directly on the grates. I’m guessing there won’t be a discernible difference? Perhaps less loss of juices from the rotisserie?
Sonic, great questions. I have a buddy who swears by spatchcock. Because the SearWood has such even cooking (most likely due to convection) I thought a rotisserie would make the most of the indirect heat, as you mentioned. I just did a second bird last night. Same results. Juicy, tender and well cooked throughout. The brining method really allows the meat to hold moisture. Happy new year! Cheers!
Ernest, thanks for the inquiry. I basically used unsalted butter, will use salted next time, I just added some hickory smoked sea salt, garlic powder, fine black pepper and smoked paprika. Prolly a tsp of each. Thanks for the inquiry! I smoked it 250 until internal temp was 165. Took about 3 hours for a 5.5 lb chicken.
I had the same thing. Need gloves I see bbq UA-camrs use. I got some and haven’t burned my hands since lol. They use black gloves on top of white cotton gloves under it. Amazon sells them nechtik store BBQ Gloves 4 Cotton Glove Liners and 100 Disposable Gloves Washable Cotton Liners Powder Latex Free Nitrile Gloves.

Recipe for the injection? How long did you smoke for and at what temps?

wet brine might help ya with more salt penetration maybe a tad of vinegar to the wet brine. keep the butter for basting

Be careful not to oversalt your bird with the butter. The overnight dry brine will allow salt penetration.
