    I was never a turkey leg fan until my daughter convinced me to try some - sometimes 11 year olds have the most wisdom!
    Those look fantastic and I imagine that Postal rub brought out the flavor even more.

    I'm so gonna miss trying your recipes!!! I just moved to Papua New Guinea as a missionary where we'll be for the conceivable future...being on an island that is a 3rd world country there's not anywhere near the options for ingredients. I'll sure try to improvise but you've gotten your recipes down to a science and everyone I've ever tried has always turned out great!

    RY Your excitement was overwhelming! I can tell watching this your passion from your childhood eating a turkey leg at Thanksgiving. I can honestly say I feel the same way brother! I can remember going to my grandparents house in Earlimart Ca as a kid and just goin to town on that turkey leg. Thank you for bringing back such great memories. I LOVE your content. Thank You.

    Love smoked turkey legs!!! And I am all about overnight wet and dry brines!!! 😁 With Turkey I use half cranberry juice and half water. With Chicken I use half apple juice and half water.

    Very nice. My personal favorite for smoking turkey legs (or whole turkey) is apple wood. I should do these legs soon. Perfect for what I call cool weather cooking. Though I am subscribed, I do not get notified of new videos from you. This showed up in my recommended list. Thanks for this and all your other videos.

    Is the s& F thermometer better then the Weber kettle? My Weber thermometer measures 40 degrees hotter then at grill grate. I can never trust mine. Always need an ambient probe to be comfortable. Love this cook! My favorite turkey part!

    Such great content Ry! You're videos convince me to sell my kamado for a Weber Kettle. Random question, we try a lot of camp dutch oven cooking, have you done much of that? I always wish there was a camp dutch oven series like your channel. If you're ever searching for new cook ideas, outdoor dutch oven recipes might be worth a look, surprisingly few quality videos currently.

      I've actually done several Dutch Oven videos. Stews, Chicken. I even did a Dutch Oven Bread Pudding which is still one of my favorite desserts. Love the Dutch Oven :)

      Look up Kent Rollins, he doesn't do everything in a Dutch oven, but he has some great recipes.

    I want to do these the day before, then reheat in a roaster, any thoughts to keep them from drying out? I was thinking of wrapping them in foil.

    Have you tried doing a long smoke using the Malory Firewall? Trying to decide between it and the Slow-N-Sear.

    Diggin’ this recipe. I’m thinking about using this recipe on my charcoal Weber grill. How could I cover one side of the grill for indirect heat and drippings as opposed to having the grill full of charcoal? Or is this only for these types of sns kettles?

      You could just create a pile on one side and ignite one end with a few coals. Similar to the snake method.

    I would use 25-25-25-25 with smokehouse maple, Montreal steak, Montreal chicken, and old bay seasoning for mine.

      I go by temp, so I'm not usually tracking time with poultry.

    Hi love many of your videos, just once I'd like to see you not brine, instead marinate which is wet, no rub of any kind needed.
    All I've seen of late is everyone putting rub on everything it's not needed.
    Dozen chicken drumsticks
    1 onion, 6 garlic cloves, ginger teaspoon grated fresh.
    Two limes rolled sliced squeezed.
    Hercules Ziploc bag
    Put all inside
    Add pepper
    1/3 cup Soya sauce
    1/3 cup vinegar
    1/3 cup water
    Put all that together in the Hercules Ziploc overnight
    Now you have a marinade no dry rub needed
    All you you tube guys berry everything in rubs sad
