    Ham Hocks/Shank. I brine it for 24 hours, dry it out and score the rind. Rub with slt and let it sit overnight. brush off excess salt and put it, standing on it's end at 450 for 1 hour and reduce to 325 for one hour. The "crackling" is worth it. I'm fortunate to live in an hispanic neighborhood. If I'm patient, I can get great pork bellies, hocks and locally grown shoulder.

    I have been seriously thinking about smoking my own ham hocks rather than buying them already smoked. I have never heard anyone say they smoked their own hocks; so, I thought I was crazy! Then I came across this video! Thank you!! I'm definately going to try this.

    Well we're a good few thousand of kilometers away but we have a very similar recipe for smoked ham hock, I'm making a batch up in two days as soon as they are ready.
    I don't smoke them myself as it's just easier as farmers tend to have smokers anyways.
    What we do is sweat the root vegies- onions, leeks, parsnips, garlic (of course) until they slightly carnalize before we add a splash of garum to simmer for a bit then rum to deglaze it.
    Add them to the beans that are simmering, toss the hocks in the in the pan just to crisp up the skin and toss them in set it to simmer.
    After a few hours take out the meat and skin and debone it and chop the meat before it goes back in the pot.
    (The bones are good to feed to chickens but not dogs as they tend to shatter.)
    After that it is just how much spices one wants to add or how much a emulsion blender is in play.
    I add a bit of the rinds taken from the hocks and baked in oven to be crispy as a really meaty garnish.
    Cuz, why not.

    I cooked pinto beans in a cook off, I smoked my own ham hocks and put them in the beans.
    They were amazing.
    I watched closely as a judge tasted my beans, he spit them out.
    Here is Texas almost everyone here in Texas uses bacon in their beans.
    Judge had no idea. Lol

    This is so interesting. Is this a typical Southern dish? The beans and hocks look AMAZING. I can only imagine how they taste. But the addition of rice is kind of surprising. I don't know why. Also, do you ever crisp up the skin of the hock after cooking it in the pot?

    This is amazing, thank you for it. Just wanted to ask, when you say ‘slowly bring up the heat’ what did you mean? What is the cooking temperature? Is it 225, 250, 275 F? And how long it should roughly take for the slow cooking/smoking part? Cheers

    Where do you get those big ham hocks? My butcher gives me small ones with very little meat, so I switched to smoked turkey legs ( for beans, greens, etc)……. But I love the flavor of a ham hock!

      I buy them uncured then cure them myself. When you buy hocks cured now days, they have no meat so you may want to cure them yourself for a great product.

    at what temperature does it turn from "cold smoke" to "hot smoking" ? Also, is it possible to freeze the smoked ham hocks, or would that ruin the taste or the texture? Great setup that you have there and this is a very informative video. Thanks.

      cold smoke under 100 deg and yes you can freeze the hocks vac seal works great
