  • Introduction to Biological Chemistry, Part 2 by Professor Fink covers Polysaccharides and introduces Lipids (fats), including fatty acids, prostaglandins, and triglycerides. The lecture describes amylose (starch), cellulose, glycogen, saturated versus unsaturated fatty acids, prostaglandins, monoglycerides, diglycerides & triglycerides.     I suggest to watch "Fat head", so you understand, that saturated fat and cholesterol (from food) do not cause heart disease, sugars does.

    Here's what the Mayo Clinic website states:
    Atherosclerosis is a slow, progressive disease that may begin as early as childhood. Although the exact cause is unknown, atherosclerosis may start with damage or injury to the inner layer of an artery. The damage may be caused by:
    High blood pressure
    High cholesterol, often from getting too much cholesterol or saturated fats in your diet
    Smoking and other sources of nicotine
    Diabetes
    In other words, excessive fats & sugars may be factors.

    Learning how to read food labels is super empowering! Thank you so much for this and all your other videos. When you mentioned marathoners' carb loading before an event, it reminded me of my last marathon in 2019 before the pandemic. Hope it's not too long until we can do that again.

    how do you know if its an acid group if it has OH group? I thought H is acid and OH is base 50:07

      The COOH carboxylic acid group behaves as an acid by releasing H+ (but Not OH-) This is because of the high "electronegativity" of the two oxygens in the molecule. This subject is usually covered in Organic Chemistry courses.

    Professor Fink, you are a great lecturer. I admire you teaching skills. However, have you ever considered teaching biological statistic - this subject is so difficult to grasp and I know someone like you could teach this subject so well in comparison to others. I know it might not be your field, but I think you could teach it and teach it well. Your teaching style is far more engaging than any lecture I have come across.

    This guy saved my ass during summer A and P so far. I hope he has enough for the rest. My teacher so far is not teaching at all. She just powerpointed the book

    I'm not sure if it's right to call lipids as fats, I googled it and found that triglyceride actually called fats .. so fats are just a subtype of lipids.

    The link between high cholesterol and cardiovascular disease is the equivalent of someone saying that ice cream causes car accidents. More car accidents occur in the summertime and ice cream is consumed in the summertime; therefore, ice cream causes car accidents. See the problem? I appreciate Professor Fink's lectures, however, it is well known that there is no direct link between high cholesterol/saturated fat consumption and cardiovascular disease. Many books have been written on the topic, but if you need a "trusted" source then please refer to PubMed where you will find current research on the topic.

    I swear I have to be ready to raise my volume every time he slaps his hands. he must be doing something to the mike he's wearing when he does that. great teacher though
