      Will, you did it again😁. I have a question regarding the soup and the potatoes. If I boil the potatoes the day before and do the soup (without the toppings), then that should work right? Just warm the soup up and pop the potatoes in the oven before dinner? Many thanks 🙏🏼

    I love how you cut your onions and garlic so much. I do something similar but not nearly as nicely at all. I must adopt this method!
    Cutting butternut squash is difficult for me. You make it look so much easier.
    I love how artistic this soup looks when you finish it. Wow.
    No hulk smashing potatoes. Got it.
    I can never feel sophisticated while cooking, for I have never tried wine in my 40 years of life. This gravy you made is the nicest I have ever seen!!!

    I made this recipe today, December 27th. Oh, my goodness. The flavor is breathtaking. That first spoonful and you know you have never been here before. I have never cooked a butternut squash. No problems other than mine had a thinner skin than yours so I didn't get that tasty, caramelized bite. Also, the thinner skin made it harder to lift off. So, I flipped it over and scooped out the flesh. Worked perfectly. I used dried thyme because fresh was not available. Only added one half teaspoon and a pinch. I wasn't sure how much to add. You mentioned a few sprigs, but I couldn't see how many that was, so I leaned to a more conservative approach. Soup was delicious so I guess I guessed correctly. The broccolini and mushrooms were definitely a hit. I think I'll cook more next time. I forgot the toasted coconut. I'll make sure to include it when I make this recipe again.

    I finally made the chili oil last week. It's divine! I wish my extended family loved mushrooms as much as I do. I have some dried black morels I've been wanting to use, but not for cream of mushroom soup as my lactose intolerance is getting intense, especially for things not cultured like yogurt and cheese. This gravy sounds like the ticket! I'll be making the smashed potatoes for family FOR SURE. They'll love it. May add some nooch or parmsean on top just for an extra "pop". Thank you SO much for these delicious recipes. We are collectively blessed for your knowledge and ability to share it in an approachable way! Blessed be

      For reference: I eat largely vegetarian as the partner is vegetarian - but make at least 3-4 meals each week fully vegan. So your recipes are always in rotation :)

    Recipe or seasoning combination for these potatoes look amazing but if you put the potatoes in the refrigerator overnight after you boil them, they will crisp even better

    Great recipes! In Australia we call them butternut pumpkins, squash is a different veg, small and yellow. The skins can go back into the oven to crisp up, they’re delicious!
    Also the potatoes are called new potatoes, they harvest these early.
    I’d use brown sugar rather than refined. The coconut is desiccated not shredded which are larger pieces.
    Why do you say garlic pieces rather than cloves! Thanks for your inspirational recipes!

    The soup looks delicious, but do you think it would affect the taste if I omitted the sugar? I would think that the butternut squash would add enough natural sweetness.

    Lazy girl version: Throw the whole butternut squash into the oven, cut & scoop out seeds when warm, throw all ingredients into vitamix, blend on high for 6 minutes and voila: soup. 😂
