Thanks for the video, this looks like a good deal. One minor correction though, when you were sharpening on your own whetstone using the guide, it wasn't 20 degrees because the whetstone is raised up from the plane the guide is expecting. For it to work, the guide would need to be approximately level with the surface of the whetstone.
You are absolutely right! The guide support adjustable pins must slide over the surface lifted to the top of stone surface. Since adjustable pins have preset locking positions it is impossible to compensate thickness of the stone by pins position. You have to have an additional surface around the stone even with stone surface. The magnetic attachment with sliding rod matches angle with top of stone.
The higher you tilt the blade on your thick stone, the less the angle becomes. Think about it, if your stone was a bit tall there would be no angle it would be totally horizontal filing metal from the whole blade it's self.
first angle is 20, you then flip it and start pulling the knife up at the end raising the angle to way over 20 degrees, so both sides are a different angle. Would suggest learning how to sharpen yourself before doing a how to on sharpening ?

Where you have the stone under the blade.

That wasn't a 20 degree angle with the stone. You need to consider the stone thickness. You could even see it in your video. The blade was too flat...

your Stone is higher then the Dia Fold, so there arent 20°?
Clamp the knife handle in a vise, it makes sharpening quicker and easier

No!! You're upside down. The Knife is held up stationary and the DMT hone is moved along the knife edge.
