Oh Barry, let my prefacet this by saying I love your videos, always such fun to see you and the family all working together to make something neat! I watch every new video that comes out. That said, as a French Canadian (hey, close enough to French French) I'd say, try this again, but once your bread is toasted (but not cheesed) drop it on the top of the soup, then add cheese on top of that, then pop it under the broiler, so the bread acts as kind of a cheese life-raft. While your version looked absolutely sublime, this technique allows for MORE CHEESE! All the best to you and the girls!
I totally agree with you about the bread&cheese and also to deglaze the pan I use red wine instead of vermouth the rich body of the red wine makes a difference in the taste and you can use any cheese you like best! Have a great day.

Well, as a French person, I have to say that Chloe did impressed me with its French prononciation. Your impersonation of Edith Piaf was recognizable but a bit blotchy. And finally, in my family at least, we make onion soup after a huge party like a wedding. Because it's easy to make at 2-3 am when you're drunk and need to sober up a large group of people !

As for suggestions for round the world food I once spent 6 weeks in Trinidad and Tobago and I was hooked on their Roti's, chicken curry being my fave, so if you could replicate this that would be awesome!! I can remember hearing that beautiful, cracked voice, and mum singing along, as she did housework - she spoke fluent French - it's such a powerful memory, I don't play it that much, or, indeed, have heard it for many years. One of my fave soups! ❤ I was just talking about pierogi : -) My family lives near a town famous for its Pierogi Festival and its always nice finding new fillings. My family has always done cabbage with onion (you boil the cabbage, squeeze the liquid out, then we run it thru a meat grinder before adding it to a pan with onions sautéed in butter, then its seasoned with salt and pepper) a Hungarian friend's family makes a farmers cheese and kraut & bacon one. I've never been a fan of the potato ones.

Love love love French Onion soup, used to always get it when doing Car Club meets at pubs as it was filling but light enough to stay comftable on spirited drives after. Only thing I'd say with Vermouth's is make sure you know the type you want to use as they get as varied as normal wine, I'm quite partial to Martini Rosso, which is a Red realitively sweet one which I'll 50/50 with blood orange (normal will do if can't get it) juice poured over ice as an all day Summer drink
This is one of my favorite comfort foods! I use sherry and oddly enough dark rye croutons. I can't get my partner on board with this meal, so since he'll be out of town next week...

Love that in the gadgets video, you always mention kitchen aids and accessibility. At the best of times, cooking leaves me very tired and lately my health has been getting worse. This gave me a video idea - reducing the impact o prep, cooking, and shopping. How to make foods keep longer (fridging bread, what can be frozen well, etc), what aspects of recipes can be done in advance, and how to adapt meals for auto-cookers like a pressure cooker or slow cooker. Love the channel! The three-item-recipes might be a go-to, it's a start to making groceries easier. Just did them today and I'm just sacked :(

I learned a neat trick for onion soup. Instead of slicing the onions, chop them into 1/2 inch dice, then you don't have those long strings of onion dangling off your spoon. Also, cut the baguette into bite-size chunks and then sprinkle them on top of your soup. Easier to eat.

Also, I really prefer putting the croutons in the soup and then putting the cheese on and putting the whole thing in the oven, because then the overflowing cheese seeps into the soup, and you have lovely strands of gruyère mixing in with those onions. De-li-cious!

As someone who cannot eat onions without a great deal of discomfort, it says a lot about the quality of the channel when I realise I've just watched 12 minutes of how to cook something I wouldn't ever consider eating!
Caramelized onions are the basis of a couple of good recipes. I learned to make tomato sauce starting with that, onion soup of course but you can also start with the onions like that for other sauces. Or just throw it on your burger haha. Maybe next time make it with vegetable stock? So Phoebe can taste it too? I know how it is, having 1 vegetarian child,...

Then, put it into the oven until the cheese is all melted. You may broil it a bit at the end. Et voilà ! French onion soup "gratinée" ! Ça goûte le paradis ! 😋💞
Barry i Challange you to make your self the dutch deep fryer snack Kroketten & bitterballen ( same filling bitterballen are just a small version) its basically a really rich beef ragout with lots of beef bits in there then rolled into a thick sausage for the kroketten and then given a crispy layer and the bitterballen are balls of the filling ( between 25 and 30 grams ) with a crust on it snd deep fried both are a bread crum crust so flour eggs breadcrums its really messy to make but do delicious

You guys are awesome! little tip when browning onions add a pinch of bicarbonate of soda. Changes the PH and speeds up the caramelising process.
