They're immediately going to realize how good they had it when the giants were a war faring culture and nothing else. Elbaph feels like an analogy for a disarmed population tbh. The mentality that comes with it - pacifism. Works great in times of peace, but in times of adversity, it's just weakness, cowardice and indecision.
Mountainbeard is 400, he probably heard stories from another mountain beard at collen's age. Who probably remembers literally fighting with or against joyboy. He is one of the closest people to the void century. It's possible we are going to see that the giants tradition hold a key to the missing pieces in the book. And that ignorant warrior Elbaph, and smart big think Elbaph are only effective together. With Mountain beard no giant is ever more than 3 degrees from joyboy. The only allies closer are an elephant and a metal friend tower that just gave the slip for a swift eggsit.
I have a bad feeling that Shanks-looking God's Knight member would take out the oldest Giant and blame it on Luffy and his friends to make the people of Elbaf attack them.
I would actually like to see them try that, and it fail for once. It's not the first time by any means that the bad guys of the arc have framed the Straw hats. Eventually everyone comes to realize they're good people and didn't do it, but usually they are hunted or hated initially. It would be kinda fun to go for that again here on Elbaf, but they already have enough good will with various influential giants that they're just like "Nah bro. These little chaos imps are our friends."
That could work with them continuing to try and blame everything on Luffy; but considering they seem to have a Shanks lookalike, I feel it'd make more sense to blame it on Shanks instead. Or they could play both sides and say Shanks and Luffy fought (over whatever).

My great-grandad lived to 104 and fought in WWII it was always amazing to talk to such an old man about the world and it really shifted my perspective on things! My theory is that someone had the desire of being able to borrow or take the strength of others due to their own lack of strength. I'm of the opinion that the desires that created devil fruits were more metaphorical then literal. Instead of someone wanting the ability of a doctor for the op-op fruit i imagine it was more the desire to save someone who was sick. Or instead of wanting the ability of literal springs maybe someone admired the power they observed in springswhen compressed.

Honestly this is why I believe that, anyone remotely close to 100 (probably ranging from 80-100) should be asked questions and someone should write down what they know if they remember it, and it's not something personal to them. They have to have some really interesting stories to tell, and it'll be like going back in time as they explain topics that seem foreign to most, but to them it was life. Idk there's just so much you can learn from your elders that, it's no wonder alot of people throughout history believed in the whole system of having elders lead villages

On another note ,there was a person that fell on a piece or rebar that pierced him from his... behind, through his whole body and through his head, sticking out the other end. He survived - no serious consequences. It was like 15-20 years ago but i am sure you can still find the news reports on youtube.
I hope he knows about the Ancient GIants and can tell us about them. Still think Oars wasn't actually evil but was framed as evil because he pulled island together after the Void Century, so that more people survived after the water levels rising. for an easy height comparison, the cristo redentor statue in Brasil is 39.6 metres tall including the base, so Jarul could see eye to eye with it
