Is there a reason you do not par cook it? I will use pints as we are an old couple LOL and could not use it up fast enough. Thank you for sharing your knowledge. This is my 1st year of ever pressure cooking, I have always used Hot bats methods. I had never done meat's. I should have started this before I retired.
I would not par cook the bacon, once you pressure cook the bacon it becomes fairly fragile. The thicker cut bacon works best pressure canning. Thank you so much for your lovely comments. I have free standing freezer with many draws and shelfs and everything go to freezer. I would be not go with preserving bacon, but I love to eat. But both of you did great work with it 🏵

I have a pressure canner but it doesnt have the little dial thingy and i havent used it ever and i believe ive had it for over two years 😬I am nervous about using it lol Isnt it so much fun when the hubby is in the kitchen doing the things lol love that he is there so awesome
Do you know what type of canner it is? perhaps you can order the part. I would suggest purchasing the weights instead though, because you're supposed to get the dial recalibrated annually. With the weights, you don't use the dial.

Thank you Cady- It should last 5 years on the shelf if stored properly. It's one of my favorite things to can. It eliminates the greasy spattering mess. My husband eats bacon every day for breakfast. only 3 half pieces, so the pints work out best for us instead of the quartz. It's great for when you find a sale and you want to keep from loading up the feezer.
I was a little confused on the cooking time we cut our bacon in half and store it in the freezer but we're going to try this and how long will it stay on the shelf they say hamburger should be good for at least one year or longer
I did not upload a video on hamburger, but it's the same process as sausage. I did a short video on how to can sausage. You brown the hamburger, drain as much fat as possible. Then fill jars add water or stock leaving an inch headspace at the top, then pressure can for 75 minutes for pints and 90 minutes for quartz.
I think you meant canner, you go by the factory instructions, for my canner it's 3 quarts of water. You pressure can 75 minutes for pints and 90 minutes for quarts. No fluid in the jars and should last 5 years on the shelf if stored properly. Thanks for watching.

It's about personal preference. I have a 23 quart Presto which can hold two stacks of pint jars. For big projects where I want to get as many jars canned as possible, I have two Nesco electric pressure canners that hold 5 pint jars for smaller canning projects. The Presto is currently on sale at Amazon for $127 and that's a great price.

I'm not sure where you heard that the grease goes rancid when canning items. The National Canners Association has proven methods for meats, just not bacon. The shelf life is supposed to be 5 years if stored properly. You might be thinking about dehydrating, this is a different story. Foods with a high grease or oil content will not stay very long on the shelf. You should only can items you're comfortable canning. Thanks for watching. 😊
It can't be just a pressure cooker, you need a pressure canner. As far as water, it depends on what brand and size of your pressure canner. Mine is a Presto 23 Quart and uses 3 quarts of water. It's not an approved method, but folks have been doing for decades. I've never had a problem with it.

Hi Marlene, I used uncure bacon. I try to stay away from any nitrates, etc. You certainly can use smoked bacon.😊
How much water did you put in your pressure cooker !?
It can't be just a pressure cooker, you need a pressure canner. As far as water, it depends on what brand and size of your pressure canner. Mine is a Presto 23 Quart and uses 3 quarts of water. Your leaving out alot of Details how long to cook and at what temperature
