Paella, Champagne Sabering & Stuntman Shots: Chef's Night out in NYC with Jamie Bissonnette

When we arrived at New York City's Toro, Chef Jamie Bissonnette warned us that we were going to be in for a night of heavy drinking. He hadn't had a night off with his friends in a long time, and rest assured that he came through on that promise.
After a shot of Fernet Branca at Toro, the crew heads out to John Dory Oyster Bar in Chelsea with a few portable gin-and-tonics in tow. Upon arriving, the guys throw back dozens of raw clams, then order up a few carta di musicas, which Jamie heralds as the "best bite" in NYC. Then it was down to Nolita for some champagne-sabering at Pearl & Ash, where there were wines to be sampled and potatoes bravas to be consumed.
The last stop before heading back to Toro is at The Four-Faced Liar in the West Village, where we find out about a little something known as the "stuntman shot." When Jamie is on the way back and realizes that he has to cook for everyone back at Toro, he's puzzled on what to make. But his prep cooks are kind enough to leave out some ingredients out for him, and the end results are some very memorable creations.

so many haters on here. so what if it doesn't follow the exact recipe of what a "traditional" tapas or paella is; if it tastes good, then you shouldn't really care. food evolves through experimentation and creativity, not through sticking to some rigid recipe made up years ago, and which is probably some form of evolution from another dish

Love this. Jealous much. Been cooking for years and have had friendships like this ONCE! And we separated and went our own way. Now, I don't think I will ever have life like that (and mine was nowhere near this caliber of skill success and good friends as shown here) again. Did I say I was jealous much already?

So do other states not have the same drinking while driving laws as california? In cali you can't have any open alcohol in the car at all even if the lid is put back on it has to go in the trunk, and these guys are drinking gin and tonics in the backseat. I've seen other chefs doing it in other episodes also so I'm kind of curious
You can drink in a car if the driver has a chauffeur license. Like a cab or limo, I do it all the time in cabs in California. Some ubers even let me do it. Though I dont think thats at all legal.
Very cool! I'll remember that next time I go bar hopping, I usually take cabs also, Ubers are way expensive unless you have somebody in your group who can get the first time discount
