Great job with the Trippa! I love this old Italian dish, but sadly without the tomato sauce. Mine is the Northern Italy type which is a soup with the stock of our Thanksgiving turkey....Great meal...Love your music bravo...

I like to braise the onions first and I know some don’t like to add garlic to onion but I do. I simmer the tripe in water sectioned in big pieces with salt , vinegar , and a Chef John trick of vanilla extract. Then I chop it into slices and add it to the sauce. I like the Roman way of adding fresh mint.
Nice recipe, in Greece commonly is making it a soup, adding only black pepper, vinegar and much garlic.It is a traditional plate,famed for the beneficial attributes for the stomach, so it was (and still is for some) the optimum way to end up a night of fun, with some (or more) alcohol consumed...
It looks good to me, I went to Italy five years ago I didn't even think of eating beef tripe in the restaurant, I was so consumed with the pasta, bread, pizza and a whole lot more good Italian food. Well I'm going to Chicago next month I will probably go to an Italian Restaurant and find out.

It had vinegar, capers, pine nuts, and green olives? t was my Grandmother's recipe, I would love to make it , she also made Cardoons, she was a great cook. First and last time I tried tripe one bit and I don't know why but I wretched so hard it was like a Vomit Howitzer and god Damn did it hurt I was getting queasy watching and this from a Devil Dog. Ya it took me a week till things stopped hurting! But I Admire you for eating the stuff I won't needs to go somewhere waste not
I ate tripe at an Italian buffet years ago. It was very good but the restaurant was no longer there when I went back a few months later. I will definitely try this recipe : )
One doesn't always get such a good "honeycomb" tripe as the chef used, most often one will have to make do with a poorer quality tripe, but it will still be nice with all the spices. If one lives in a 3rd world country there will rarely be any fresh produce of first-grade quality on the supermarket shelves, the best of the best having all been shipped overseas to the rich countries.
I make my tripe with no olives & add a couple of whole potatoes to my sauce, I use 1 can of crush & 1 can of puree, & I add in a few bay leafs some good red wine to the sauce & let cook for about 2 hrs.?
I love tripe, my style is close to yours.
