It’s easier to peel a small amount if backing as you line it up. It keeps the stencil sturdy and then you can peel off the rest

After about 4 repeats, my ink will begin not entirely going through the screen in places. Any idea why?
What type of ink are you using?? Different brands dry at different rates, so if your paint/ink is drying in the mesh too fast, then you will have issues with the mesh getting clogged and not letting paint through.
Would this hinge system work if you wanted to do it on woodboards (or anything with some depth to ti)? Maybe you can make a template board to place under the screen so that it is clamped at the height needed for printing. Thoughts??
Yes exactly! You would need to raise the hinges up to allow for the depth and use a paint or ink that doesn’t dry too quickly in the mesh 👍🏼
If you were doing a smaller size, life 5 x 8, would you make the size of your stencil smaller?
Yes, you could. It's personal preference how much blank space you leave around your image :)
