    Becky, we LOVE you :) My nephews are addicted to your show. They are 4, 6 and 9 years old. We have already made your laundry soap. I bought the "Happy Homesteading" T-Shirt (It was a must have). Can you please do an episode about making butter? The nephews want to make some and asked me to write to you.

    Becky, this goat cheese from scratch is great, people that rely on a store to provide them with cow and goat cheese should give this a try! not only is it healthier for you but, it's also cheaper and so much more tastier, I eat fresh goat cheese over my greens. Thanks for sharing this information with me.

    A lot of stores I've went to have goats milk in the yogurt/cottage cheese/cream cheese section and not with the rest of the milk in the milk section where most people would think it would be. Maybe try looking in those sections the next time you go to the store.

      +Lee Lowe Um, they showed milking, heating, adding coagulant, the press and talked about many of the details involved such as temp, source of equipment, etc.. That's pretty much everything that was necessary.

    Great video. I would love to be able to own a dairy goat for milk and to be able to make my own cheese. We just got a bunch of chickens so maybe in a couple of years I can try and convince hubby into getting a dairy goat ;D

    Hey Becky I was wanting to build a homestead.the hardest part is getting started.how did you find your land.I live in south louisiana and cannot find a good deal in land at all.I haven't looked every where but the few places u did look the ppl were saying it's hard to find what I need since everyone is wanting the same thing so the protected are high.

      Get to know a veterinarian before you get the animals. You'll save yourself a lot of grief to learn before you buy. They are not hard to keep but you must know about vaccinations and deworming and some other things first.

    now I see that goats are more manageable than cows, easier to milk, not as big, they eat a bit less, and the don't have stinky poo!

    Very interesting. Can you make butter with goat milk or goat cream (if there is such a thing)?

      +jksatte Yes you make the butter with cream but, goats milk is naturally homogenized the fat droplets are emulsified and the cream does not separate like cows milk does. So you need a cream separator.

    when you make make the cheese do you leave the cream in the milk or do you separate the two before making cheese?

      +Edward Sarah Matthews The milk she poured in was from the milking jar, so no. No separation is needed.

    That's weird.
    I know Publix sells goat cheese (Not farm fresh or anything though) and its fairly good...
    Goat milk should be available in most places though.

      Chris Hughes Wish I could. I used to keep goats. Sadly, I'm no longer capable. Disabled, no place to keep them anymore, blah blah. I found them to be really neat people tho. Funny, smart and usually a royal pain in the butt. I did finally manage to find a fairly good source of milk at one of our stores. It;s pasteurized but with a little calcium chloride... I did manage to make up five smaller triple creme, mushroom infused, 'ashed' bries. I hope. Going in for their brine bath today and should know in about a month. Wish me luck. You folks buy your cultures or harvest them? I harvest and kinda shoot from the hip from there like in the old days. Be well.

    When she put 2 pots inside each other to avoid burning the milk , did she put water inside the bigger one ? Or they are just inside each other ?

    Great job. I have milk a cow here in Puerto Rico and turn it into milk. It was a wonderful experience.

      +Ana AA I remember drinking raw cows milk when i was young in Aguadilla Puerto Rico it was the best tasting milk ever, plus the fat on top worked great for chapped lips lol.

    It's a double boiler.
    Hence, its one larger pot with some water in it and a smaller pot inside where you put the stuff.
    A lot of people use this for chocolate melting.

    Why don't grocery stores sell goat milk and goat cheese? Its a lot healthier than cow milk and sadly no stores here in my city sell it.
