How to make... Banh Mi Sandwich!

  • Not many sandwiches can boast it’s origins from a French occupation in the late 1800’s while also maintaining core aspects of a traditional cuisine.     If anyone here wanna enjoy the true taste of banh mi please put lemongrass in your blender instead of ginger. I think the reason our dishes have ginger when they're presented on western cooking channels is because ginger helps warm up your stomach after having the meal (it's much colder in the UK than Vietnam/Thai). But in general, the foods here don't have ginger in, we only rub ginger in&out fishes or seafood or ducks to get rid of fishy/ducky smell. No ginger in Banh Mi or Summer Rolls and sauces I swear. I'm writing this because I've seen some comments below these cooking videos complaining about the foods tasted so different compared to the ones they had in Vietnam. I appreciate those inspired recipes but some have ruined the true flavour.

      Lemon grass is a must!!...So is grilled green onion! and Cilantro! he used coriander maybe ive been mistakin thoose too

      Coriander is Cilantro after its produced flowers and seeds so theyre the same

    i'm really very happy you've called it "vietnamese-inspired" because a lot of chefs shy away from openly saying that it's not "authentic" to that ethnic community's cuisine. it's just important as sort of a disclaimer. thanks for being real to my culture. i'm really happy you got to experience vietnam!

    looking good, love your take on the Banh my :) in Hanoi, we don't have Banh my with hoisin and mayo. You can try the simple Banh my with just fried egg with green onion, some pickle and hot sauce of your choice. That's a quick and simple breakfast in my house :)

    A tip for peeling ginger is to use the spoon end of a teaspoon and drag it down the ginger that way you don't waste any

    It is astonishing that you can get authentic Vietnamese banh mi for $2 here in Toronto (with the proper bread!). Delicious. Toronto has spectacular food of all kinds - if you ever want to know a spot to eat for a particular cuisine I probably know where to go.

    When I was first married and relatively poor, and both my wife and I were slaving away at crap jobs we made sandwiches for dinner on Fridays. It started out as something to do because we were both to tired to cook and couldn't afford to go out, and it became a competition to make the most complex, decadent things we could come up with. We should start doing that again, and this recipe would be a great way to start it.

    I'm Viet. I'm not sure what the other Viets in the peanut gallery are thinking...but he hits some really good points--some that people miss, some that are less obvious. So the most important thing of a Viet sandwich is actually the pickle. The second thing that most people don't get is actually liver pate. It's not important to replicate the rice/flour baguette but you can actually do very well by purchasing a crappy supermarket baguette because it's airy. Otherwise, you can use just about any protein in the sandwich. The important thing is that veg supplies the contrast of warm to cold!

      The traditional meat used for Banh mi is pork. Few places use chicken but not beef

    You don’t pickle the cucumbers. And usually the mayo is separate from the banh mi sauce (if they have one ... a lot places just sprinkle soy sauce or Maggi). I’ve watched some videos of the sauce being made - it’s usually a interesting mix of ground pork, pineapple, hoisin, hot sauce and a bunch of other things.

    If my very little Vietnamese is correct, saying Bahn Mi SANDWICH is the same as saying Naan bread or Chai tea. Bahn means a couple of things; dough, bread are some of them and I think sandwich too.
    But great recipe anyways! I think I gotta try it sometimes when I have more time^^

    Because the baguette is of French influence, it's made with regular flour... we use regular bread in Vietnam, not rice flour baguette... (I'm French and Vietnamese)

    Inspired Donal. Did you use pork tenderloin which I am thinking you did or pork loin? Also the pork pate was a surprise but omg I could just enjoy a pate sandwich with whole grain mustard and sliced cornichons, lol. Thanks for this.

    Suddenly every Vietnamese person here turned in to en expert food critic. Just because he isn't making it the "authentic" way, doesn't mean he isn't doing it right.
    When he made Hasselback potatoes, I didn't say a word, even though i thought he could've changed the recipe a little bit. Why? Because he is making it his way, the way he likes it.

      When you think about it Banh Mi is not about "authentic signature dish" but rather than a personal comfort food, so having modified the food to one's taste is really being true to the dish in the first place.
      Can you count the number of version of the food that bear the same name "Banh Mi" in Vietnam? No, but everybody has their fav.

    You have forgotten one really important thing Banh Mi is suppose to eat warm or at least the baguette should be warm. So that it is as authentic as possible. But really nice recipe.

    Actually Banh Mi means bread :). "Bánh" describes any kind of bun, and "mì" refers to "lúa mì" or "bột mì" which are wheat and wheat flour.
    In Vietnamese when you say "bánh mì" people automatically refers to the sandwich because it's such a common breakfast dish, however, technically it's only bread so saying bánh mì sandwich is still not wrong since sandwich is a dish made from bread.

    Thanks for telling people to put pate! Banh mi is cultural influenced by France so of course we have pate in it! I've had bank mi in Vietnam, France, and here in California :)

    Hello! I believe the secret sauce is usually egg yolk beaten with a little oil to make it more like mayo but not mayo. :)

      my mom makes it. we just call it butter, too thick to be Mayo probably ahaha

    Definitely approve of the amount of pate on that roll. I'm fussy as hell with my pate but that looks good. hehe. Also loving you put pickled daikon. Sydney has some of the best banh mi, and I'm related to some of the best banh mi makers. #cravings.

    I had a lot of banh mi when I was in Hanoi but unfortunately it was always after a night out and I was way too drunk to even know what I was eating. I remember it being super delicious though! Haha x

    I had one that had a pinch of pâté, on the end (probably from the knife, in error), it was so much better with it. I can't digest pork, so I never get a pork one, but if you can eat pork, definitely add the pâté!

      +Linda Sol yes, and vegetable as well. The sandwiches are so common in my area, it would cost more to make it at home. They're $3-$3.50. Plus, I could do without the extra fat. :)

      It would definitely not cost me more to make it at home haha but I don't have to cause my family owns a bakery so I can eat it all the time lol Not sure where you're from though but it can get pretty expensive in Australia depending on your area. Then again a lot of those cheap places use cheap ingredients and unfortunately, they aren't always delicious :(

      +Linda Sol I'm from California. It's one of our super cheap, tasty foods. The veg is always fresh. I live near an Asian market, so I can buy pickled veg, and have for other dishes. I'm single and lazy. ;)

    There is one secret that makes banh mi so oustanding - grill your baguette thoroughly in the oven or on a charcoal grill (about 15-20 seconds will do the trick). This will enhance the crispiness of baguette ;) Ya know that irrestible sound when crunching the sandwich, ha? ;)

    Oh come on, he did a good job. He did not say he made bánh mì though. His sandwich is just inspired by "bánh mì", isn't it. Not to mention, there are tons of ways to prepare the "real" bánh mì. I'm Vietnamese eating bánh mì almost every single day when i was in high school and to be honest, i don't even know exactly what is the "real" bánh mì" :)) Give him a break :))
