For soy intolerant people out there I'm just letting you know that it works also with Almond milk!! :) I made my own homemade almond milk for this, purposely with a high concentration of almond so it was higher in protein than store bought I think.. at first i thought it was not going to work but I just kept adding more oil gradually and it work beautifuly !! Other than that, I didn't follow the recipe to the letter but it was still super good! Also it worked for me with a regular blender.
I love adding black salt (or kala namak) to my mayo to make it taste extra eggy like traditional mayo! That baconaise looks delicious, I need to try it

Hint: Adding a slight pinch of himalayan black salt (i.e. kala namak) to the mayo will give it a sulphur "eggy" taste. I add black salt to anything I cook where an egg taste is preferred. Himalayan black salt/kala namak is an Indian volcanic rock salt and can be found for sale at Indian food stores or online.
A little tip for when you ever don't feel like making fresh mayonnaise: I recently tried the vegan mayo from Hellmann's and really liked it. You should be able to find it in Germany. Not sure what store though...
@@kaushalgogula2138 When I buy the sachet with kala namak at the Indian store they are pink and smell of sulfur. In pieces it is very dark, once finely ground it's a greyish pink. Pink Himalayan salt has a more light pink and the texture is not as fine.
Aquafaba (chickpea water leftover from the can) makes a great mayo if anyone can’t have soy because of allergies etc. Probably would need to change the recipe for it but maybe Gaz can make a soy free version at some point 🙂
Gateaux Q I just made both the soy and aquafaba version using everything else Gaz mentions in this recipe and it tastes amazing, the aquafaba actually fluffed up better than the soy so I could make it in just my food processor. No need to change the recipe just switch out the soy and you’ll have delicious mayo.

I make it for my sister because she cant have soy due to thyroid issues, I did notice the mix went a bit runny after a few hours in the fridge compared to the soy version, but the taste is almost the same as when you make it with the soya milk. The fresh lemon juice Gaz uses in this recipe works great with the aquafaba.

Then I used a hand mixed and whipped it instead of blending and it worked perfectly. Thanks for the recipe. Then I added pepper, salt, and onion powder and it tasted amazing

Bro you heard my cry for help. I'm transitioning to vegan for the first time ever and made some fries yesterday but had no vegan mayonaise to go with it!
Fries are like soy in some ways, cheap poverty versions of vegan food. I used to love eating fries, yet essentially they are TOXIC CANOLA OIL GMO DEATH WITH AN EXTRA HEAPING OF FREE RADICALS ON TOP...go for some properly steamed purple potatoes or yams and put a little grapeseed oil on top with celtic or Himalayan salt, eat like a vegan King/Queen...healthy!
Now, both of these look like something I would like. As odd as this will sound, I never liked mayo. To me it was slimy and I knew it had eggs in it and I never liked eggs (I've been a picky eater since I was a child). But these look good - no eggs, healthy ingredients and some herbs for some zip to our taste buds. TY Gaz for sharing with us! Stay healthy.

oooh, aquafaba is a great shout. I don't really like the taste of soy milk, so just buying it for making some mayo sounds wasteful. But chickpeas I usually have at home anyway.
Trish C i can share one, don’t know if it’s the same but here it goes: 1 cup of oil 3 tbsp aquafaba 1 tbsp dijon mustard 1 tbsp of vinegar or lemon/lime juice Salt to taste Seasonings (I love adding 2 tbsp of nooch, garlic/onion flakes and some smoked paprika) Blend all of these ingredients using a hand blender for at least 20 seconds and it’s done! If you’re using aquafaba from chickpeas you’ve cooked yourself, you might need a bit more of it and might need to blend it for a bit longer! But that’s basically it, should keep in the fridge for about a week or so!
Great recipe! I didn't think mayo was possible with soy milk, so I look forward to trying this. I've also made vegan mayo with silken tofu and the other typical ingredients with great results. The consistency is seriously identical to egg-based mayo.

I ran out of lemons, I used lemon balsamic vinegar 2 TBS (I had to add another cup of soy milk because I read TBS instead of TSP lol), my grape seed oil was expired and had a funny aftertaste, so I used 1 cup of avocado oil and olive oil until I got the consistency I wanted, added celtic salt and it turned out perfectly - thanks Gaz !!
The only thing that sucks is that the plant based hype has "vegan supermarkets" overcharging so much. They're just helping people transitioning to say "this is too expensive".

Spent the morning reading Plants Only Kitchen! and planning a lunch for a friend next week. Definitely going to do the peanut crusted tofu and the roasted curried cauliflower. With a butter lettuce salad. Yum. That baconnaise looks fantastic!

The only worse thing I made was pancakes.. anyway I wasted some expensive oil but you have to learn from your mistakes, right? I'll listen to the instructions next time and make an update haha Update: THIS TASTES SO GOOD. I've never liked the non-vegan mayo but this is amazing. I used a different kind of oil and it didn't leave leave that deep bitter taste. I made 2 batches: garlic with herbs and curry. I like the garlic one better; I used both garlic gloves and garlic powder and the taste is so intense, I can't get enough of it!! I used the curry powder for the other one and the taste isn't as strong but it's still very good. Thanks for the awesome recipe! Next time I'll try the bacon one from the video.

You've been a huge inspiration for my wife and me. This mayo recipe came out perfect when we made it. it went great with our vegan tortilla de patatas j(a Spanish classic).
For people with a soy allergy, sub sunflower lecithin because it works really well as an emulsifier for vegan mayo. Add a little mustard powder to mask any sunflower flavor.
Next best oil to use? and can you use apple cider vinegar . Apple cider vinegar (with the mother) is nice mixed with avocado & chickpeas/salt /pepper makes a nice dip :)

@@majvlierop It's literally mayonnaise mixed with miso paste. Miso is a fermented soya bean paste common in Japan, and it's delicious. I mix about 1-1.5 table spoon of miso paste with a base mayo (1 dl soya milk, 1,5 dl oil, 1 tbs mustard, salt, pepper, some lemon juice) and 1-2 cloves of garlic depending on your taste for galic :)

Have you tried the vegan mayo by Hellman’s. I like that one. If you’re in the U.K. about £2.99 to £2.15 depending what stores you shop 😊
In the US veganaise is a tasty brand but a little pricey. Have not found it since the 'pan' demic tho.

It also works with coconut milk, but it needs to be the full fat type; Chaokoh brand never fails.

I've done this for a while, and my favourite variety is the Miso mayo. Just delicious, try it out!
What is the miso mayo Nikolaj?
@@majvlierop It's literally mayonnaise mixed with miso paste. Miso is a fermented soya bean paste common in Japan, and it's delicious. I mix about 1-1.5 table spoon of miso paste with a base mayo (1 dl soya milk, 1,5 dl oil, 1 tbs mustard, salt, pepper, some lemon juice) and 1-2 cloves of garlic depending on your taste for galic :)

Looks great! He needs to remind everybody though not to use olive oil though, I tried that once and it was bitter and awful
You're right. Olive oil is too bitter. I use sunflower oil and a little bit of olive oil because if it's not too much it gives a great added flavour.

you can use light tasting olive oil. It's made specifically for salads. It has virtually no flavor. have to read the label though
That totally depends on your oil. Personally I always use olive oil but it’s a very soft one. An extra Virgin oil and it is beautifull
