Dude, I've been watching you for so long (as a romanian) and absolutely love your guys content. However, this might just be the most wholesome thing you've done romanian related. After you "boil" the polenta, try to add some dill in it and butter and continue to mix for 1 more minute. You can also add 1 teaspoon of creamcheese in it and it will be 10x better.

The papanasi is actually made more like a donut than it seems at first glance. You make a round cut in the middle of the dough, and then fry the two pieces separately, then place the ball on top of the hollow space you initially took it from. That's how you make the ball sit in place, and it might help with the overall shape of the bigger piece too.

Tips for mici: make them a little larger before putting them on the grill; because of the fat percentage in the meat mix they can shrink quite a lot
Tips for the sarmale: cut the spine on the leaf in a V shape (you should not have any hard veins on them). For easier rolling, think of it as sort of an envelope: put the meat in the leaf, fold the sides over the meat and then the side that's towards you on top, and roll until the leaf ends (preferably not to cut it). Be mindful of holes in the leaf because the meat can seep out when you boil it.
Other tips: mash potatoes with sarmale is a no-no
Sarmale and mici should be served separately (they are usually consumed as separate dishes)

You should try mixing HOT polenta with cottage cheese and sour cream it is a perfect mix , you will eat it with tears in your eyes 😂 (you can also add an egg or two in the mix)

What a beautiful, typical Romanian birthday party, congratulations for the mici and for the sarmale, they look wonderful and I'm sure they were also delicious.
A sarmale tip that could change / enhance the flavor is to add extra carrots to the mix along with the meat and rice.

Advice . To make sure that the papanasi dough is cooked in the middle, you have to make a donut shape with a hole in the middle . But congratulations, I'm glad you tried it and I'm glad to see that you like Romanian recipes

Cabbage rolls cooking before rolling usually requires you to remove that thick part on the leaves (thing which you already did anyway). The secret of making the real sour cabbage taste like you tried it in our country isn't that much of a secret but it will give it that sour taste and it usually takes time, I think you usually put the cabbage into a saline solution inside a barrel - usually in September or October. The solution concentration for making it picked, sour and tender is I think 1 part salt to 10 parts water. Then you let it rest for a few months (they should usually be ready to get rolled up and give out enough flavor before Christmas time, so that means 2 or 3 months but you can eat them whenever you want to throughout the year). Then you'll have to mix the solution and/or blow air through a tube (it's sometimes made out of rubber) from time to time, if you'll do it each day it will be perfect. Then you can move the cabbages a little bit while they're in the barrel and "wash" the cabbages a bit because they can make what we call "floare" on top (fermentation). If this happens, you'll need to remove it. It's very important not to forget to add some cherry tree leaves or mulberry leaves, well some people even add a bit of garlic (inside that solution). For cabbage rolls, you put the minced meat flavored with spices in the middle (don't ever forget to add some thyme and paprika - but for extra taste add some oregano and basil - it's not mandatory or standard but it usually gives it a very interesting and more pronounced taste) and roll it over and on the sides you simply ply them inside. The dish usually calls for some pretty fat meat or even slănină to be added between the cabbage rolls. I prefer some smoked meat. When you've done this, you can also add some extra sour cabbage and chop it slightly, then you can also add some chopped peeled tomatoes and on top and even between the cabbage rolls you have to add some dry thyme, sprigs of thyme. Thyme and cabbage are like a marriage made in heaven, probably like you sharing the laughter and happiness with each other. 🙂 As a variation, you can also serve it with yoghurt (usually sour variety not the Greek one). Your sarmale looks very good but try making this (my) version. Happy birthday, once again, misses Ivana. 🙂

@@bocskailucia159 You should try it, the recipe made with spices is very tasty (yes, I gave them a recipe suggestion too). I only put them in the know (detailed them) how the cabbages are kept in salt and how they can be eaten for months if the cabbage is kept in a cool place, in a pantry. They are already learning how to cook Romanian dishes, they know the dishes names, mici look very tasty to me (although too much bicarb added but if that's the way he or they like it so be it). It looks like they've done a great job, it looks even better than in some traditional restaurants from our country. Now the so called "traditional" restaurants have some Italian dishes in their menus too but it's okay, customers dictate the menu according to what they'll buy. I'm glad they had a good time and that's what matters, it's about how you feel at a birthday, the food shouldn't be our main concern or to get there just to eat as much as one can.
