    When you guys were making bread in may , i recommended egg shell broken off, use egg shell, just touch egg shell piece, it acts like a magnet and you get the egg shell piece out. Nice to see you gave it a try today.
    Its fun to watch you guys bake. You make my day happier!

    Arne your technique for creating the cones is great. I didn't know to 'glue' the sides together and that's really helpful. Carlos you did a great job. Not to worry so much about perfection. As with everything, it takes just a little practice. When I make krumkaka, to keep from burning my fingers, and to go really fast with cooking each individual krumkaka, I would take the pancake off the grill and lay it on a cotton towel, then I roll it. However they never stay 'glued'. I may still do that but then return them to the grill to glue them securely. We generally ate them without any fillings, so it wasn't too important to have them glued, but they also didn't stay nicely 'coned'. This year I'm using Arne's technique. My family will be gathering to make krumkaka and lefse together. I get to show them a new recipe with brandy and potato flour. Then I can show them the glueing technique. Very intriguing and a little exciting. How fun! By the way, just cooking in the kitchen is chaotic for anyone. Also more than one cook in the kitchen can be chaotic. You guys are cooking 2 cookies at the same time, while showing us what you're doing and sharing the recipe. I think that verges on multitasking, and both of you often admit that's a difficult thing for you to do. So in my book you're doing excellent! Great Job! I love the little tidbits you offer.

    My husband is originally from Prato, where the Cantucci were first made and eventually they became famous Italy-wide. The original name is "Biscotti di Prato", even though everybody in Italy refers to them as Cantucci. When I told my husband you were experimenting with the recipe he was very happy to know that you enjoy them! Thank you for another great episode!

    Arne & Carlos make you feel like you're in the kitchen with them feeling all their anxiety and anticipation of the outcome. Beautiful work! Next weekend I'll be making Swedish "S" cookies from a New York Times Magazine recipe from 1992. I've made them before and got raves (my Dad looked at me and said, "You made these!?").

    A trick with vanilla bean is putting a bit of sugar on the board and blend it with the vanilla bean grains. It helps not wasting any precious grains. ❤️

      You need a microplane -- fine side of grater is not as fine as a microplane.

    Chaos? What chaos? You take me back to my youth, baking cookies and making candies with my mother. There were always many traditional items, plus a few new ones here and there, of which many became traditions in time. They were enjoyed and shared with family and friends near and far, with holiday packages shipped all over. Fond memories 🎄

    Some tips for beating egg whites. Use a very clean glass bowl with straight not flared sides. Be sure the beater is very clean. Fat or any substance will inhibit the formation of the foam. Beat slowly at first to warm the eggs ( room temp eggs work best).. use the tool Arne likes not the one Carlos used. Be sure and not over beat and when adding to the mixture mix as gently as possible. I thought of all the baking shows this was the best. I would give this baking session an A+

      I'm so happy you mentioned this, backing is in the details :) The grating of the lemons is done with a fine grater by the way :p I learned so so much watching Dessert Person, Claire always explains why this or that is important :)

      Would you be willing to share her recipes? My German grandmother died when she was young from Tuberculosis. So, sadly we have none of her recipes. I have been searching for recipes that are authentic and of course, from a wonderful grandmother to make and to pass to my children. Warmest Regards, Heather

    I so enjoyed watching you make biscotti today. My Italian grandmother always had a tin of these in her cabinet that she had baked. As children, we called them Grandma Cookies and I never knew the real name for them until I was older. I have wonderful memories of making these with her.     Many years ago, I hosted annual cookie parties for my co workers. Each person brought an appetizer, beverage of choice ( I had spiced cider available), and 3 dozen cookies. We had appetizers and drinks, swapped recipes and everyone went home with a mixture of all the different cookies to share with their family and friends. This episode brought those memories rushing back. Thanks!

    Just went to the market today to get fresh new boxes of baking soda and baking powder, plus other ingredients for baking cookies. I'll share my secret ingredient from my krumkake recipe...2 Tablespoons of corn starch. This helps keep them light and crisp!! Thanks for the inspiration for baking and knitting!

    This is “more like” real life in its busyness and activity. Add kids dashing through, snagging a cookie here and there, telephones and doorbells ringing - and you’ve got my usual state of chaos! That’s what life is like. And then you set the book of matches on fire, of course.
    I love what your reader wrote. How many of us think later on “Did I really do/say that?” She was charming in her explanation and you were charming right back.

    Don't worry about chaos at Christmas, Carlos. We all have to contend with that. Just remind yourself what you once told us about trying to knit jogless stripes. "It's not a problem!"
    Yesterday I unwittingly created my own Christmas chaos. I decided to move a few things from one closet to another, to make better use of space. I started about nine o'clock after I'd had morning coffee, estimating that I'd be done with the task no later than noon. Ten hours and half a bottle of Kijafa later, I still had not finished and piles of stuff were everywhere. I crawled into bed about midnight. But it sure felt good to wake up to that "all done" feeling this morning.

    Don’t throw out your old cone maker. Try to remove the metal clip and use it in your garden as a fibber for planting bulbs and seedlings. Another great video. ❤️

    I love biscotti! This year, I made Cranberry Pistachio Biscotti-so festive with the red berries and green nuts. Carlos, your gift to Arne of the wooden rolling pin is so thoughtful. The krumkake are so pretty!

    When I was growing up, I was uninterested in my Italian mother's biscotti she made at Christmas time. now I love them and buy at the gocery store. The second cookie I reminds me of waffle cones that hold ice cream.

    My mother made biscotti. Her mother made it too. They were different as my mother didn't like much Anise seed. I loved them both! Glad to see you include biscotti in the box! ~Marie

    I learned recently that it’s not the eggs that carry salmonella, but the flour. In the US, the flour packaging says not to eat raw flour. It’s fun watching you two bake cookies!

    You never have to apologize for chaos in the kitchen, Carlos! I found all the “ chaos “ extremely delightful! I am an American With all of my ancestors from Italy so I am very familiar with biscotti! I was thrilled when I saw you baking them! They looked absolutely delicious, the only difference between those and my grandparents recipe was that they baked them twice. In any case, you both did a fantastic job in the kitchen!, thank you!

    Yummy.... and who doesn't love cookies. Unfortunately I haven't gotten to making the sweaters and christmas balls, but I'm having a great time watching the unveiling of the gifts. I'm in the process of finishing a sweater for my granddaughter then dyeing some yarn to knit a hat to go with a jacket I bought her for Christmas; but I will start this adorable project in time for next year.

    My traditional Christmas cookie is a stuffed pizzelle which is also rolled immediately after coming off the pizzelle iron-and burning your fingers. I use wooden #17 knitting needles to wrap mine around. That’s our traditional Italian cookie and this year I also made your Brune Pinner and my family loves them-- thank you !!!!

    A nostepinne! Yes - another use for my beloved ancient viking fiber tool. Reminds me of when I learned that you can use a knitting needle to turn aebeleskiver in the pan. More proof that knitting and baking go together!

    You are the best company one could wish for on a Sunday evening. I did your brune pinner yesterday and I must say they are delicious. From now on they´ll be on my traditional baking list for Christmas. Today, while watching your podcast, I was in the middle of my chaos baking "Zimtsterne" (=cinnamon stars) and they are always a bit tricky because of the sticky dough. But they turned out fine and your presence on the screen made it all so worthwhile. Have a happy Advent.
