    Your 'make it yourself' attitude is one of the reasons I love your channel, Chef. I do the same thing; I used to use store-bought mixes of herbs and spices, until one day I took a closer look at the ingredients list of one of them: 70% salt! Ever since, I make my own mixes. Same thing with cooking: using store-bought ingredients can't always be avoided, but if at all possible, I make it myself from scratch. Everything tastes so much better, and it isn't stuffed with salt, 'flavour-enhancers,' preservatives, and whatever other additives they put in it at the factory.

    Chef..the college I am a sous chef at has no idea how much they love your cooking. I always share sources..some students just don't care, they want to eat great food. Thank you for helping/teaching me because it brings more depth to my food. I appreciate everything you do here without charging me anything at all.     I'm so happy to see that you forgot the salt and told us about it.
    Normally other "ding dongs" would just edit it in and fake the taste test to tell us it was delicious.

    I kept thinking, hey he forgot salt and black pepper. I bet it will need some... and low and behold he remembered at the end (thank goodness)! This recipe works well and is so good and easy to play around with and add other ingredients etc. Thank you Chef Jean-Pierre 🤩

    I do most of the cooking in the house. To me it's not a chore because I enjoy cooking. I also love your videos because I learn something every time. You are not only a great chef but also a great teacher. You do it as a real person with a lot of heart. You can make cooking funny, enjoyable, and easy to watch. Don't ever stop! I'll be watching. :)

    WOW AGAIN Chef! Another great dish and when you forgot the salt it reminded of an old family story. My mom was the best baker I knew. She once made a delicious pumpkin pie and forgot to put the sugar in the mix. My dad ate the whole pie and said it was delicious!! He would have never let my mom know that she made a mistake cooking! True love.

      @@ponalvsiki2254 For over 60 years, my dad ate every meal my mom cooked without ever complaining. Some of those meals were so awful we kids wouldn't touch them. It didn't happen often, but it did happen.

    I love how you are always telling your viewers how you do it, but encourage people to do what they like. Cooking is all about personal preference and of course the people you are cooking for. I wrote a cookbook for my sons, and told them the most important ingredient in any recipe is love. After every recipe I include footnotes, telling them to taste, adjust to their palate, an skip or add ingredients as they feel needed. You do this for your viewers, an I appreciate this so much! Thank you for sharing your knowledge and recipes with your UA-cam viewers, you are the best!

    Chef, as a fellow maker of curry (sauce in Indian) your recipe looks amazing. The only thing we do in our family is leaving out the chicken. We eat vegetarian curry. The rice addition of cilantro sounds like a great addition and I will be trying that one out for size.

    Chef, I was a good cook before I met you, but now? People that really liked my cooking before, they love it now. It is amazing how many simple tricks I have learned from you that have really brought my cooking to a new level. I don't mean when I am doing your recipes, which I love. I am talking about recipes I have been making for thirty-five years and people are surprised that after all that time, I can still improve the recipe! Your work is a blessing!     Up until I saw this video I used to buy the ready made curry sauce in a jar. Although good I adventured in buying a coffee grinder, and the ingredients to make the curry. The result was "amazing". My family really enjoyed the end results. From now on I will use Chef's techniques. Thanks Chef..

    Chef JP ...I love your channel and your cooking. One thing about your curry video. I cannot believe you had a big bowl of butter sitting there and didn't add any to your curry. I find that adding butter makes my curry richer.

    That looks so golden and good! I love that you used whole roasted spices! It makes so much difference! Tempered Whole yogurt with a little cream in that would take it to the next level! So also would using your famous clarified butter to cook the chicken!

    You are absolutely right chef. My mother has a different recipe for her curry, my wife has her own style, my grandmothers have their own and so does my mother in law. At the end of the day, all of them are delicious. That is what matters.

    I love Thai green curry and recently have been making my own with peppers, onion, garlic, turmeric, and cilantro as main ingredients. It makes a moist paste that needs to be cooked in oil first before adding the meat. It is easy to make but hard to get right, if that makes any sense. There are so many kinds of curry, but Thai is my favorite right now.

    Great version of a classic dish. My old mum would take exception to this though as the classic Indian dish involves white onions, tinned tomatoes and yoghurt to make the sauce, as well as all the spices you mentioned.
    But as always chef you are absolutely correct in saying that the dish is yours to cook however you want to and we must all be open minded enough to accept each other’s differences. God bless you chef, keep these videos coming. In a crazy world, it’s little things like your videos that keeps us sane. 💓

      I forget about curry dishes, but when I am stuck and don't know what to make well then I know it's curry time. Curry is so easy and so good; not to mention versatile. I really don't know why I keep forgetting to keep it in my rotation.

      @@abuhamza1970 you're right there are so many different styles:. Indian, Jamaican, Massaman, Thai, Japanese, Malaysian, Pakistani etc. One for everyday of the week and more.

      Agree, definitely not classic Indian cooking. Corn flour - hmm.. but.. chef's own and it's his dish. Sure it tastes great, particularly having roasted and ground the spices. Always a must.

    Great curry Chef JP. Good food made easy. Chef, I follow your channel and I forget stuff too... and I make mistakes... and have misadventures in my kitchen... and I laugh and learn when trying your dishes which always taste amazing. My Christmas wish (putting it out there early but if you dont like Christmas, dont worry, its your wish, is to watch an episode of Chef Jean-Pierre Bloopers in the Kitchen. I think with your approach and ready humour (never use that frozen humour its Quaaack) it would be an absolute blast to watch. Thank you for being you Chef.

    I have been cooking all manner of curry dishes for the past 45 years. Nevertheless, I am always open to using new techniques as I am planning to cook my chicken curry today. I thought why not see what Chef JP uses for his technique de cuisson for curry making. I was astonished and very pleased to see that the technique you recommend is not the same but actually identical to the technique that I use. The only difference is that I use a heavy caste iron wok that gives me terrific results. Keep up the great work. Your Aussie mate from down under, Paul.

    Enjoy watching your chicken curry recipe. In the summer I make a cold pasta chicken curry, adding a handful or two golden raisins and purple grapes 🍇 sliced in half. If I can’t find purple grapes, just use the large green grapes. It’s what our local farmers market have. Use yellow bell peppers and lightly steamed broccoli 🥦 cooled . I do use the yellow curry with fresh zested ginger while stir frying chicken. Then after all cooled along with the pasta, I add the curry into homemade mayonnaise stirring until well incorporated. Like you mentioned many times Chef JP, add whatever you like.
    Never thought of adding Cilantro 🌿 When I was in college many years ago, there was a Indian Cuisine Fair. Was my first time trying different Chutneys. Some of the folks there added raisins to their recipes, which gave me that idea. Having fun in the kitchen on a hot summer day, inspires oddly great tasting recipes. I live in the Bartlett Pear 🍐 Capital of the USA. Each September the locals hold the Annual Pear Festival here in Lake County California. Some of the recipes using themed Bartlett Pears and Asian Pears are AWESOME. Pear Salsa 💃

    Pear Preserves are just a few that you can come here to enjoy and purchase supporting our local Farmers. It’s back this year 9/24/22 after not having the annual festival because of Coronavirus. So, it’s great to being able to attend this year. Did I mention Pear Wine ? 😊 The Kelseyville Pear 🍐 Festival 2022 !!!
